Potatoes Extraordinaire
Each one of these is like a potato salad in a bite!
- 25 small red new potatoes
- 1 pint sour cream
- bacon bits, chives, blue cheese, caviar, or any other topping you like
In a large pan, cover potatoes with water and boil gently until JUST tender. Drain and let cool until able to handle easily.
Cut each potato in half (east to west) and carefully scoop out the pulp, leaving 1/4-inch of potato in the skin. Fill with sour cream. Top with suggested toppings and place on serving platter. Can be served warm or cold. Makes 50 potatoes. Enjoy!
