Tried and True Dinnertime Favorites: M.Q’s Chicken Casserole and Bundt Bread!

This special episode from 2002 featured recipes that all came from Arlene’s second cookbook, At Home with Family and Friends. However, you don’t have to buy the cookbook to get these recipes; in fact, you don’t have to buy anything! We’re got all the instructions right here on our website.

Over the years, the recipe for “M.Q.’s Chicken Casserole” has appeared multiple times on At Home, but exactly what “M.Q.” meant was never explained. Perhaps it was someone’s initials. Or, perhaps it’s an abbreviation for “Mighty Quick,” because this recipe comes together so fast! We don’t know, but it sure is delicious, just like the other recipes in this show!

M.Q.’s Chicken Casserole

This is a great dish that's easy to throw together on a busy weeknight, but fancy enough to serve to company.

Ingredients
  

  • 2 to 2 1/2 pounds chicken, cooked and cut into bite-sized pieces
  • 1/2 cup slivered almonds
  • 1 cup finely chopped celery
  • 1/2 cup finely chopped onion
  • 2 cans condensed cream of chicken soup (10.5 oz, each)
  • 1 1/2 cup mayonnaise
  • 2 cans sliced water chestnuts, drained (8 oz, each)
  • 1 1/2 tsp tarragon
  • 1 1/2 cups grated medium-sharp cheddar cheese
  • 1 1/2 cups potato chips, crushed

Instructions
 

  • Preheat oven to 450 degrees. In a large bowl, combine chicken, almonds, celery, onion, soup, mayonnaise, chestnuts and tarragon and mix thor­oughly to blend. Spread evenly in a 9 x 13-inch baking dish.
  • Top chicken mixture with cheese and potato chips. Place in oven and immediately reduce heat to 350 degrees. Bake in preheated oven about 30 minutes. Do not allow sauce to bubble as it will separate. Makes 10 to 12 servings. Enjoy!

Zucchini Lasagne Casserole

Ingredients
  

  • olive oil
  • 6 to 8 medium-sized zucchini, sliced into circles
  • 1 cup thinly sliced Vidalia onions
  • 2 cans herbed tomato sauce (15 oz each)
  • 2 Tbsp dried oregano
  • garlic salt
  • black pepper
  • 1/4 cup Italian bread crumbs
  • 1 1/2 cup shredded mozzarella cheese
  • Parmesan cheese

Instructions
 

  • Preheat oven to 350 degrees. Grease bottom of a 9 x 13-inch baking dish with olive oil. Layer sliced zucchini into prepared baking dish, then cover with onions.
  • Pour tomato sauce over onions and zucchini. Sprinkle oregano, garlic salt, black pepper and bread crumbs, in that order, over sauce. Top with Mozzarella cheese then sprinkle with Parmesan cheese.
  • Cover and bake in preheated oven for 35 to 45 minutes. Makes 8 to 10 servings. Enjoy!

Bundt Bread

This bread is a show-stopper. Your guests will devour it with their eyes before they ever taste it. It's simple but very tasty.

Ingredients
  

  • 1/2 cup butter
  • 3 rolls refrigerated biscuits (10 oz, each)

Instructions
 

  • Preheat oven to 350 degrees. Place butter in a bundt pan and put pan in preheated oven until butter melts. (Just a minute or two). Remove pan and carefully tip and tilt to cover the sides with melted butter. Leave excess butter in the bottom.
  • Without separating biscuits, place each of the 3 rolls of biscuits in the pan to form a circle, joining biscuits. Bake in preheated oven for 25 to 35 minutes. Remove from oven and turn out onto a serving plate. Serve immediate­ly. Pull bread apart and spread with jam or honey. Makes 8 servings. Enjoy!

MIL’s Wilted Lettuce Salad

An old-fashioned recipe for a sweet and sour salad.
Course Salad

Ingredients
  

  • 1 bunch leaf lettuce, cleaned and broken into pieces
  • 1 small onion, chopped
  • 6 strips bacon
  • 1/3 cup vinegar
  • 1/3 cup sugar
  • salt and pepper

Instructions
 

  • In a large salad bowl, place lettuce and onion. Set aside in refrigerator to crisp.
  • In a small skillet, cook bacon until crisp. Remove, drain and crumble. Lower heat and add vinegar. Continue to heat until boiling and add sugar. Lower heat and stir until smooth. Pour over lettuce just before serving. Salt and pepper to taste. Makes 6 servings. Enjoy!
