Italian Hummus

Course Appetizer, Side Dish, Snack

Ingredients

  • 2 cans chick peas (15.5 oz, each), drained
  • 5 cloves garlic
  • 4 shallots
  • 1 cup olive oil
  • 1 cup grated Romano cheese
  • Italian parsley, to taste

Instructions

  • Place chick peas into a food processor along with garlic and shallots. Pulse a few times to start chopping. As chick pea mixture is chopped, start adding olive oil to a smooth consistency.
  • Continue processing and add Romano cheese. This should firm up your mixture. You may add more olive oil and cheese to obtain firmness. Now, add parsley and pulse into mixture.
  • Place in refrigerator and chill well before serving to allow the flavors to work together. Makes 4 to 6 servings. Enjoy!

  • 1 pkg cream cheese
  • 18 fresh jalapeno peppers, halved lengthwise and seeded
  • 9 slices bacon, cut into half slices
  • toothpicks

Instructions

  • Preheat oven to 425 degrees.
  • Spread cream cheese into jalapeno pepper halves; wrap each with a piece of bacon. Secure the bacon with toothpicks to prevent unraveling while baking. Arrange wrapped jalapeno peppers onto a baking sheet with cream cheese side facing down.
