There’s something really special about all the At Home episodes from 2013. Nobody really knew it at the time, but this would be the final season for the show. (Although Arlene would go on to host cooking segments for another program.)
In this episode, Arlene and Laura Comanici are cooking up a big breakfast filled with sweet treats and savory sides, including mini breakfast pies, broiled grapefruit, a french toast loaf, honey nut granola, caramel hot chocolate, and more! Why not get the family together this weekend and enjoy a special breakfast or brunch together?
Mini Breakfast Pies
Ingredients
- 3/4 lb breakfast sausage
- 1/8 cup minced onion
- 1/8 cup minced green bell pepper
- 1 can refrigerated biscuit dough (12 oz)
- 3 large eggs, beaten
- 3 Tbsp milk
- 1/2 cup shredded Colby-Monterey Jack cheese
Instructions
- Preheat oven to 400 degrees.
- In a large, deep skillet over medium-high heat, combine sausage, onion and green pepper. Cook until sausage is evenly brown. Drain, crumble, and set aside.
- Separate the dough into 10 individual biscuits. Flatten each biscuit out, then line the bottom and sides of 10 muffin cups. Evenly distribute sausage mixture between the cups. Mix together the eggs and milk, and divide between the cups. Sprinkle tops with shredded cheese.
- Bake in preheated oven for 18 to 20 minutes, or until filling is set. Makes 10 pies. Enjoy!
Caramel Hot Chocolate
Ingredients
- 2 Tbsp sugar
- 2 Tbsp unsweetened cocoa
- 3 1/2 cups milk
- 1/4 cup caramel ice cream topping
Instructions
- Combine sugar and cocoa in a small saucepan; stir in milk and ice cream topping. Cook over medium heat until mixture is thoroughly heated and caramel topping dissolves, stirring constantly. Serve immediately. Makes 4 cups. Enjoy!
French Toast Loaf
Ingredients
- 1 cup half and half cream (1/2 pint)
- 4 large eggs
- 4 Tbsp sugar
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 4 cups bread cubes, any combination of breads
- 1/2 cup chopped pecans or walnuts
Instructions
- Preheat oven to 350 degrees. Coat a 9- by 5- inch loaf pan with cooking spray.
- In a large bowl, combine all ingredients except bread cubes; mix well. Stir in bread cubes and allow to sit for 10 minutes, or until all the liquid has been absorbed.
- Spoon mixture into loaf pan and bake 55 to 60 minutes, or until golden. Remove loaf from pan, slice, and serve. Makes 4 servings. Enjoy!
- Note: I like to top each slice with a sprinkle of confectioners' sugar and serve with maple syrup and cut fresh fruit.
Honey Nut Granola
Ingredients
- 4 cups rolled oats
- 1 cup sliced almonds
- 1 cup raw sunflower seeds
- 1/3 cup brown sugar
- 3/4 cup applesauce
- 1 Tbsp olive oil
- 1 cup honey
- 1/3 cup crunchy peanut butter
- 1 tsp vanilla extract
- 1 Tbsp ground cinnamon
- 1 cup orange flavored craisins
- 1/2 cup coconut
- 1/2 cup dried apricots, chopped, optional
Instructions
- Preheat oven to 275 degrees. Line 2 cookie sheets with parchment paper. Set aside.
- In a large bowl, stir oats, nuts, sunflower kernels and brown sugar together. In a separate bowl, mix together applesauce, oil, honey, peanut butter, vanilla and cinnamon. Add to dry ingredients; mix well. Stir in craisins, coconut and apricots if using. Spread mixture onto two prepared baking sheets.
- Bake in preheated oven, for 7 minutes, and stir. Return to oven and continue baking 7 more minutes, stir, return to oven and bake another 7 minutes, stir, return to oven for 4 minutes more. Total baking time is 25 minutes. Granola should be light golden in color. Remove from oven and immediately dump onto paper towel lined sheets to cool. Let cool completely before storing. Makes 5 cups. Enjoy!
Broiled Grapefruit
Ingredients
- 2 grapefruits
- 1/2 cup brown sugar
- 2 Tbsp butter
Instructions
- Preheat broiler. Cut each grapefruit in halves, remove seeds, and then cut around sections (but leave them in) so the fruit can be easily removed when eating.
- Sprinkle each half with a little brown sugar. Dot each half with softened butter or margarine. Broil for 10 minutes or until golden and heated through. Makes 2 servings. Enjoy!
- Note: Each broiler cooks at a different speed, so keep a close eye on the grapefruit to make sure the brown sugar doesn't burn!
