Arlene, Tammy, and Paul Make Mrs. Macintosh’s Homemade Buns!

This is a very special show! Even though Arlene was an excellent cook, she didn’t make many recipes for homemade bread, because yeast doughs can be difficult to work with. But, this recipe is so easy and so delicious, everyone will want to make it.

Mrs. Macintosh was a lady who went to Arlene’s dad’s church when Arlene was a little girl, and she made the best homemade buns! Arlene remembers that sometimes when they would give Mrs. Macintosh a ride to church, she would thank them with a box of her freshly baked bunsβ€”which was always an exciting treat!

In this episode from 2012, Arlene, Tammy, and Paul work together to whip up a big batch. With some of the extra dough, Arlene also makes some homemade cinnamon rolls. Yummy!

Mrs. Macintosh’s Sandwich Buns

This is the classic bread recipe made by a friend who went to Arlene's parents' church back in the day. It is delicious!

Ingredients
  

  • 2 cups lukewarm water (about 110 degrees)
  • 1 tsp salt, or more
  • 1/2 heaping cup white sugar
  • 1 large egg, beaten
  • 1 large cake fresh yeast (2 oz)
  • 2 1/2 lbs flour, or more (half of a 5 lb bag)
  • 1/2 cup, minus 2 Tbs vegetable shortening, melted and cooled

Instructions
 

  • NOTE: If you cannot find cake yeast, you can use active dry yeast. About 3 packets of active dry yeast (6 3/4 tsp) is equal to one 2 oz yeast cake.
  • In a large bowl, combine water, salt, sugar, egg, and crumbled yeast. Mix thoroughly. Add a little flour, about 1-2 cups, to make a paste. Then add cooled shortening and beat vigorously. (This dough can be made in a stand mixer with a dough hook attachment.)
  • Slowly add remaining flour until a soft dough forms and begins to leave the side of the bowl as it's mixed. Place dough on a lightly floured surface and knead until smooth and elastic, about 10 minutes.
  • Place dough in a greased bowl and turn gentle to coat. Cover with a damp cloth or a greased piece of plastic wrap, and let rise in a warm place for about 3 hours, until dough has doubled in size.
  • Once dough has risen, gently remove from bowl and pinch off 18 pieces of dough and shape into 3-inch balls. Place on greased baking sheets, about 3 inches apart. Flatten tops of balls, loosely cover with greased plastic wrap, and let rise a second time for about 2-3 hours.
  • Preheat oven to 375 degrees. Bake buns in a preheated oven for 15-20 minutes, until tops are golden brown. Remove buns from baking sheets and cool on a wire rack. Brush tops with melted butter if desired. Makes 18 large sandwich buns. Enjoy!

Cinnamon Roll Filling for Macintosh Buns

This recipe turns the delicious Macintosh bun dough into Cinnamon Rolls!

Ingredients
  

  • 1 recipe for Mrs. Macintosh's Buns (just the dough)
  • 2 Tbs cinnamon
  • 1 1/2 cups white sugar
  • 2 sticks soft butter (salted)
  • chopped nuts or raisins (optional)
  • 2 cups powdered sugar
  • 2-3 tbs milk
  • 1 tsp vanilla extract

Instructions
 

  • Prepare the bun dough according to the instructions in the other recipe. After the dough has risen once, place on a floured counter and gently roll out with a floured rolling pin, making a large rectangle of dough, about 1/4 inch thick. (It might be so big that you'll have to divide the dough into 2 pieces and do them separately!)
  • Using a rubber spatula, spread a thin, even layer of softened butter all over the dough, leaving a 1-inch border on all sizes.
  • In a small bowl, stir together sugar and cinnamon. Using a big spoon, sprinkle sugar mixture all over the buttered dough until evenly coated. (You can adjust the amount to your liking.) Sprinkle chopped nuts or raisins over sugar, if desired.
  • Starting at one wide end of the rectangle, evenly roll dough into a long tube. When finished, pinch the dough together at the seam so that it won't come apart.
  • Using a sharp knife, cut the dough into one inch sections, wiping down the knife as needed to make sure you get clean cuts. You should see a spiral shape in the dough from the cinnamon and sugar.
  • Thoroughly grease two or three 13×9" baking dishes. (The recipe makes a lot of cinnamon rolls!) Place the cut pieces of dough spiral-side up in the dishes, with enough space around them so that they expand as they rise. Cover loosely with a greased piece of plastic wrap and let rise a second time 1-2 hours.
  • Bake, uncovered in a 350 degree oven for about 30-45 minutes. If tops begin to brown too much, cover loosely with a sheet of aluminum foil. Let pans cool on a wire rack for 20 minutes. Whisk milk, vanilla, and powdered sugar to make a glaze, adjusting consistency as needed with extra milk. Drizzle over cinnamon rolls and allow to set before cutting and separating into individual rolls. Enjoy!
