Everybody has a favorite part of Thanksgiving dinner. Maybe it’s the turkey, or the stuffing, or the mashed potatoes, or maybe even the green bean casserole. But everybody likes dessert! In this episode from 2012, Arlene is joined by her friend Laura Walker, as they make three Thanksgiving desserts that are fun, easy, and a little bit different.
First, they make pumpkin raisin cookies with caramel icing, a perfect treat for after (or before!) dinner. Then instead of the standard pumpkin pie, they mix things up with an awesome sweet potato pie, Finally, Arlene shows a really wild recipe: Mountain Dew apple dumplings, which you’ll have to see to believe!

Pumpkin Raisin Cookies
Ingredients
Pumpkin Raisin Cookies
- 2 1/2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups sugar
- 1/2 cup butter
- 1 large egg
- 1 tsp vanilla
- 1 cup canned pure pumpkin
- 1 cup raisins
Caramel Icing
- 6 Tbsp butter
- 3/4 cup brown sugar, packed
- 4-6 Tbsp milk
- 2 1/2 cups powdered sugar
Instructions
- Preheat oven to 350 degrees. Spray baking sheets with Pam.
- In a bowl, combine dry ingredients: flour, baking powder and soda, and salt. Mix to blend and set aside.
- In a mixing bowl, using a mixer, combine sugar and butter and blend until creamy. Add egg, mix well, then add vanilla and pumpkin and blend thoroughly. Slowly add dry ingredients, beating after each addition until cookie dough forms. With a spoon, stir raisins into dough.
- Drop by spoonfuls onto prepared sheets and place in preheated oven. Bake for 12 to 15 minutes. Remove from oven and cool on wire racks.
- While cookies are baking, in a saucepan over medium heat, melt butter. Stir in brown sugar and milk and stir to blend. Bring mixture to boil. Remove from heat and allow mixture to cool. When cool, add powdered sugar and mix well. Additional sugar may be added to get a good consistency to spread. Makes 3-4 dozen cookies. Enjoy!
Awesome Sweet Potato Pie
Ingredients
- 1 cup soft butter
- 4 large sweet potatoes, boiled in skins until very soft
- 2 cups sugar
- 1/2 tsp ground nutmeg
- 3/4 tsp ground cinnamon
- 4 large eggs
- 1/3 cup evaporated milk
- 1/2 tsp vanilla
Instructions
- Preheat oven to 450 degrees.
- Place butter into large mixing bowl. Peel skins off yams while still hot from cooking and place yams into bowl with butter. Using a mixer, blend butter into sweet potatoes until butter melts. Stir in sugar, nutmeg and cinnamon, mix well.
- In another bowl place eggs and whisk until blended. Add the milk and vanilla and whisk to combine. Pour this mixture into potato mixture and blend well. Pour into pie shells.
- Place pies on cookie sheet for better control in getting in and out of the oven. Bake for 10 minutes in preheated 450 degree oven, reduce heat to 350 degrees and continue baking for 45 additional minutes. Cool on wire racks. Makes 2 or 4 pies. Enjoy!
Mountain Dew Apple Dumplings
Ingredients
- 2 Granny Smith apples, peeled, cored and cut into small pieces
- 16 refrigerated crescent rolls
- 1 1/2 cups sugar
- 1 cup butter
- 2 tsp cinnamon
- 12 oz Mountain Dew soda
Instructions
- Preheat oven to 350 degrees. Grease a 9x13inch baking dish.
- Place sugar, cinnamon and butter in a saucepan. Heat until butter is melted and sugar is dissolved. Separate dough into triangles.
- Put approximately 2 teaspoons of apples close to the wide end of each triangle. Roll dough to form a crescent.
- Place the rolls into prepared pan. Pour cinnamon butter mixture over the crescent rolls. Then pour Mountain Dew soda over last.
- Bake in preheated oven for approximately 35 minutes. Cool for 10-15 minutes. Serve warm with vanilla ice cream. Makes 16 servings. Enjoy!
