Honey Nut Granola

Ingredients
  

  • 4 cups rolled oats
  • 1 cup sliced almonds
  • 1 cup raw sunflower seeds
  • 1/3 cup brown sugar
  • 3/4 cup applesauce
  • 1 Tbsp olive oil
  • 1 cup honey
  • 1/3 cup crunchy peanut butter
  • 1 tsp vanilla extract
  • 1 Tbsp ground cinnamon
  • 1 cup orange flavored craisins
  • 1/2 cup coconut
  • 1/2 cup dried apricots, chopped, optional

Instructions
 

  • Preheat oven to 275 degrees. Line 2 cookie sheets with parchment paper. Set aside.
  • In a large bowl, stir oats, nuts, sunflower kernels and brown sugar together. In a separate bowl, mix together applesauce, oil, honey, peanut butter, vanilla and cinnamon. Add to dry ingredients; mix well. Stir in craisins, coconut and apricots if using. Spread mixture onto two prepared baking sheets.
  • Bake in preheated oven, for 7 minutes, and stir. Return to oven and continue baking 7 more minutes, stir, return to oven and bake another 7 minutes, stir, return to oven for 4 minutes more. Total baking time is 25 minutes. Granola should be light golden in color. Remove from oven and immediately dump onto paper towel lined sheets to cool. Let cool completely before storing. Makes 5 cups. Enjoy!
