Blueberry French Toast Cobbler

Making individual French toasts can take a long time on a busy morning. This makes it easy and delicious!

Ingredients
  

  • 1 1/2 pounds frozen blueberries
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1 tsp corn starch
  • 4 eggs
  • 1/2 cup milk
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 loaf French bread, sliced

Instructions
 

  • Spread blueberries in bottom of 13x9" baking dish and sprinkle with sugar, cinnamon and cornstarch. Set aside.
  • In a bowl, combine eggs, milk, baking powder and vanilla. Slice bread and dip each slice into mixture. Place dipped bread on top of blueberries, cover and refrigerate overnight.
  • Preheat oven to 425 degrees. Place pan uncovered, in preheated oven until lightly browned; about 25 minutes. Makes 4 to 6 servings. Enjoy!
