Christmas Tree Chicken Salad

There's something about eating food shaped like Christmas trees that always makes it more fun. Although, this recipe could be used year round if you shape it differently.

Ingredients
  

  • 8 cooked boneless, skinless chicken breast halves
  • 7 hard-boiled eggs, finely chopped
  • 3/4 cup celery, chopped
  • 1/3 cup sweet relish
  • 1 1/2 cups mayonnaise
  • salt and pepper, to taste
  • grape tomatoes, halved
  • green olives
  • assorted crackers

Instructions
 

  • Cut cooked chicken into large chunks, then place chunks in a food processor. Process until chicken is very finely chopped. (You may need to stop and scrape down the sides of the food processor. Place chicken into a large mixing bowl.
  • Add finely chopped eggs, celery, sweet relish and mayonnaise and mix well with a spatula. Taste and adjust seasonings as needed.
  • Place salad on a large, flat serving dish and mold into a simple Christmas tree shape. Place tomato halves and olives on tree as ornaments and place crackers around base of tree. Cover with plastic wrap and refrigerate until served. Makes 12 to 15 servings. Enjoy!
