Preheat oven to 350 degrees. Line mini cupcake pans with paper liners.
For the filling: In a mixing bowl, using a mixer, combine cream cheese, 1/3 cup sugar, dash of salt and egg until creamy and smooth. Stir in chocolate chips. Set aside.
For the cake: In a large mixing bowl with mixer, combine flour, sugar, cocoa, salt, cold water, vegetable oil and vanilla. Mix well until batter forms.
Spoon the batter in lined cupcake pans, leaving cups about 1/2 full. Top the batter with a spoonful of cream cheese filling. Bake in preheated oven for 10 to 15 minutes. Makes about 7 dozen cheesecakes. Enjoy!
