Patti's Chocolate Chip Cheesecake Cups

These mini cheesecakes are like cupcakes but even better!

Ingredients
  

Cream Cheese Filling

  • 1 package cream cheese, softened (8 oz)
  • 1/3 cup sugar
  • dash of salt
  • 1 egg
  • 1 cup mini semi sweet chocolate chips

Chocolate Cake Base

  • 2 1/4 cups flour
  • 1 1/2 cups sugar
  • 1/2 cup cocoa powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups cold water
  • 3/4 cup vegetable oil
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 degrees. Line mini cupcake pans with paper liners.
  • For the filling: In a mixing bowl, using a mixer, combine cream cheese, 1/3 cup sugar, dash of salt and egg until creamy and smooth. Stir in chocolate chips. Set aside.
  • For the cake: In a large mixing bowl with mixer, combine flour, sugar, cocoa, salt, cold water, vegetable oil and vanilla. Mix well until batter forms.
  • Spoon the batter in lined cupcake pans, leaving cups about 1/2 full. Top the batter with a spoonful of cream cheese filling. Bake in preheated oven for 10 to 15 minutes. Makes about 7 dozen cheesecakes. Enjoy!
