Chicken Salad with a Twist
This is a healthier spin on traditional chicken salad, and it has a sweet twist!
- 3 boneless, skinless chicken breast halves, cooked and chopped
- 1 cup chopped celery
- 1 cup small seedless grapes (red or green), sliced in halves
- 1 can mandarin oranges, rinsed and drained (small 11oz can)
- 1/4 cup slivered almonds
- 1 small 4oz container vanilla yogurt (fat free and sugar free, or whatever you prefer)
- 1/2 cup lowfat or fat free mayonnaise (to taste)
In a bowl, combine all ingredients and mix thoroughly, but carefully (so you don't break up orange slices). Adjust mayonnaise amount for desired creaminess. Refrigerate until ready to serveĀ·.
To serve, may be spread on low carb-type flat bread, or served on a bed of lettuce. Makes 3 to 4 servings. Enjoy!
