Chicken Salad with a Twist

This is a healthier spin on traditional chicken salad, and it has a sweet twist!

Ingredients
  

  • 3 boneless, skinless chicken breast halves, cooked and chopped
  • 1 cup chopped celery
  • 1 cup small seedless grapes (red or green), sliced in halves
  • 1 can mandarin oranges, rinsed and drained (small 11oz can)
  • 1/4 cup slivered almonds
  • 1 small 4oz container vanilla yogurt (fat free and sugar free, or whatever you prefer)
  • 1/2 cup lowfat or fat free mayonnaise (to taste)

Instructions
 

  • In a bowl, combine all ingredients and mix thoroughly, but carefully (so you don't break up orange slices). Adjust mayonnaise amount for desired creaminess. Refrigerate until ready to serveĀ·.
  • To serve, may be spread on low carb-type flat bread, or served on a bed of lettuce. Makes 3 to 4 servings. Enjoy!
