Angel Hair Spaghetti Pomodoro

With chicken, red sauce, and delicate thin noodles, this is a delicious pasta dish!

- 1 pound chicken breast or chicken breast tenderloins, cut into bite-size pieces.
- 1/4 cup olive oil
- salt and pepper, to taste
- 1 large can crushed tomatoes in puree (28 oz)
- 1 medium onion, sliced thin
- 1/3 cup olive oil
- 2 Tbsp butter
- 3 Tbsp sugar
- 2-3 cloves garlic, minced
- 8-10 fresh basil leaves
- 1 pound angel hair spaghetti pasta, cooked according to package directions
In a skillet over medium-high heat, saute chicken pieces in olive oil for about 7 minutes or until done. Salt and pepper, then set aside.
In another skillet, over medium heat, caramelize onions by sauteing the sliced onion in 1/3 cup olive oil and butter. Add sugar and saute for 15 minutes. Add garlic during the last 30 seconds to cook.
Add chicken pieces to pan with caramelized onions. Add crushed tomatoes and blend well. Add basil and stir to mix well. Cook on low heat for at least 1 hour. Serve over cooked angel hair. Makes 4 servings. It's fabulous, delectable, and down right tasty. Enjoy!
