Angel Hair Spaghetti Pomodoro

With chicken, red sauce, and delicate thin noodles, this is a delicious pasta dish!

Ingredients
  

  • 1 pound chicken breast or chicken breast tenderloins, cut into bite-size pieces.
  • 1/4 cup olive oil
  • salt and pepper, to taste
  • 1 large can crushed tomatoes in puree (28 oz)
  • 1 medium onion, sliced thin
  • 1/3 cup olive oil
  • 2 Tbsp butter
  • 3 Tbsp sugar
  • 2-3 cloves garlic, minced
  • 8-10 fresh basil leaves
  • 1 pound angel hair spaghetti pasta, cooked according to package directions

Instructions
 

  • In a skillet over medium-high heat, saute chicken pieces in olive oil for about 7 minutes or until done. Salt and pepper, then set aside.
  • In another skillet, over medium heat, caramelize onions by sauteing the sliced onion in 1/3 cup olive oil and butter. Add sugar and saute for 15 minutes. Add garlic during the last 30 seconds to cook.
  • Add chicken pieces to pan with caramelized onions. Add crushed tomatoes and blend well. Add basil and stir to mix well. Cook on low heat for at least 1 hour. Serve over cooked angel hair. Makes 4 servings. It's fabulous, delectable, and down right tasty. Enjoy!
