Corn Pudding Casserole

Ingredients
  

  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/2 cup butter
  • 1 can cream-style corn (16 oz)
  • 1 can whole kernel corn, do not drain (16 oz)
  • 3 eggs, beaten
  • salt
  • pepper
  • 1 pkg Jiffy corn muffin mix

Instructions
 

  • Preheat oven to 350 degrees.
  • Saute onion and green pepper in butter for 5 minutes. Stir all ingredients into muffin mix; beat until smooth.
  • Bake in casserole in preheated oven for 30 to 40 minutes. (Longer baking makes pudding firmer.) Makes 6 servings. Enjoy!
