Olympia's Chicken Salad

Ingredients
  

  • 8 boneless, skinless, chicken breast halves, cooked
  • 7 hard-boiled large eggs, finely chopped
  • 3/4 cup celery, chopped
  • 1/3 cup sweet relish
  • 1-1/2 cup Hellmann's mayonnaise
  • salt & pepper to taste

Instructions
 

  • Place cooked chicken into a food processor after cutting it into chunks. Process until chicken is very finely chopped. Place chicken into a large mixing bowl.
  • Add finely chopped eggs, celery, sweet relish and mayonnaise and mix well with a spatula. Taste and adjust seasonings as needed.
  • Serve on crackers, mini croissants, in lettuce leaf wraps, or tortilla wraps, They will all taste good. Makes about 6 cups. Enjoy!
