Savory Indian Corn Pudding

Ingredients
  

  • 2 Tbsp olive oil
  • 1 medium red onion, chopped
  • 1 red bell pepper, diced
  • 1 1/2 cups fresh or frozen corn kernels (if using frozen, thaw before using)
  • 3/4 cup grated cheddar cheese
  • 1/2 cup milk
  • 3 eggs, beaten
  • 1/2 tsp dried basil or 1 Tbsp chopped fresh basil
  • salt and black pepper, to taste

Instructions
 

  • Preheat oven to 350 degrees. Grease a 1-1/2 quart shallow casserole dish or a 9 x 2-inch baking dish.
  • Heat oil in a skillet and add onions and red pepper. Saute for 5 minutes. Remove from heat and place in a mediumĀ­ sized bowl. Add corn, cheddar cheese, milk, eggs, basil, salt, and pepper.
  • Pour into prepared casserole and bake for 30 minutes, or until a knife inserted in center comes out clean. Makes 4 to 6 servings. Enjoy!
