1 1/2 cupsfresh or frozen corn kernels(if using frozen, thaw before using)
3/4cupgrated cheddar cheese
1/2cupmilk
3eggs, beaten
1/2tspdried basil or 1 Tbsp chopped fresh basil
salt and black pepper, to taste
Instructions
Preheat oven to 350 degrees. Grease a 1-1/2 quart shallow casserole dish or a 9 x 2-inch baking dish.
Heat oil in a skillet and add onions and red pepper. Saute for 5 minutes. Remove from heat and place in a mediumĀ sized bowl. Add corn, cheddar cheese, milk, eggs, basil, salt, and pepper.
Pour into prepared casserole and bake for 30 minutes, or until a knife inserted in center comes out clean. Makes 4 to 6 servings. Enjoy!
