Arlene's Combination Sandwich

This recipe can easily be multiplied or modified to make as many as you want!

Ingredients

  • 1 slice deli ham about 1/4 inch thick
  • 1 tsp butter
  • 1 tsp Dijon mustard
  • 2 tsp mayonnaise
  • 3 slices plain or lightly toasted wheat bread
  • thin sliced onion
  • 1 egg
  • salt
  • 1 slice cheese
  • lettuce leaf
  • sliced tomatoes

Instructions

  • In a medium sized nonstick skillet, place slice of ham and butter. Over medium high heat, saute ham just into slightly browned. Drain on paper towel. Set aside and keep warm.
  • In same skillet, break egg and break yolk, but do not scramble. Salt lightly. Cook over medium heat until firm, then flip to cook other side, about 1 minute. Place slice of cheese on top and turn off heat.
  • Spread mayonnaise on each of two slices of toast. Spread mustard on third slice. Place mustard slice on serving plate and place ham slice on top. Add onion slice. Top with another slice toast. Add egg and cheese and top with lettuce leaf and sliced tomatoes. Place with the third slice of toast, mayonnaise side down.
  • Place 2 toothpicks opposite each other about 1/2 inch from edge of sandwich. Cut from corner to corner. Serve immediately. Garnish with a large dill pickle. Makes 1 serving. Enjoy!
