Arlene's Momma's Homemade "Ham" Salad

You can use ham in this recipe, but Arlene's mom used to use a nice quality bologna, which gave it great flavor!

Ingredients
  

  • 1 lb plain or garlic bologna (or "Jumbo" in Pittsburgh!)
  • 3/4 cup sweet pickle relish or dill pickles
  • mayonnaise to taste
  • 8 soft sandwich buns
  • lettuce leaves, optional

Instructions
 

  • Cut bologna into 1 inch pieces. Process in a food processor until finely chopped. Pour into mixing bowl. Add relish and mayonnaise to taste. Stir until well blended.
  • Place a scoop of salad onto each bun and spread evenly. Add lettuce leaves if desired. Tastes better when well chilled. Do not freeze. Makes 8 servings. Enjoy!
