Cheese Dollars

These homemade cheese crackers are delicious! And they make a great gift, too.

Ingredients
  

  • 1/2 lb sharp cheddar cheese, grated (8oz or about 2 cups)
  • 1 cup unsalted butter, softened
  • 1 cup crisp rice cereal
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 2 cups flour

Instructions
 

  • In a bowl, using a mixer, blend cheese, butter, cereal, pepper, salt, and flour. Mix until well combined and a chunky dough forms.
  • Divide dough into 2 even-sized chunks, and place on 2 large pieces of plastic wrap or waxed paper. Roll and shape dough into logs that are about 2-3 inches thick. Wrap tightly and refrigerate for 1 hour.
  • Preheat oven to 325 degrees. Once dough has stiffened, slice with a sharp knife into 1/4" thick discs.
  • Place slices on an unrgreased baking sheet and bake in a preheated oven for 20 minutes. Makes approximately 25 pieces. Enjoy!
  • Note: If you don't have time to chill the dough, it can also be rolled out on a floured counter and cut with cookie-cutters.
