Preheat oven to 350 degrees. Grease a casserole dish.
Peel and cut potatoes into cubes. Place in saucepan and cover with cold water. Bring to boil and cook until potatoes are very soft and tender. Drain well and mash potatoes until smooth.
In a small saucepan, blend together butter, cheddar cheese and the milk. Cook until thoroughly combined and melted. Stir milk mixture into mashed potatoes and blend. Next gently fold beaten eggs into potato mixture. Pour into prepared casserole dish.
Bake in preheated oven for 45 minutes, uncovered, or until puffy and golden. Makes 6-8 servings. Enjoy!
