Cinnamon-Peach Cottage Cheese Pancakes

Ingredients
  

  • 4 large eggs
  • 1 cup creamed cottage cheese
  • 1/2 cup milk
  • 1 tsp vanilla
  • 2 Tbsp butter, melted
  • 2 fresh peaches shredded or canned
  • 1 cup all-purpose flour
  • 2 Tbsp white sugar
  • 1 pinch salt
  • 3/4 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 can peach pie filling
  • whipped cream

Instructions
 

  • Mix eggs, cottage cheese, milk, vanilla, butter and peach in a large bowl. Combine flour, sugar, salt, baking soda, and cinnamon in a small bowl. Stir flour mixture into the cottage cheese mixture until just combined.
  • Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
  • When serving, top with pie filling and whipped cream on top. Makes 12 pancakes. Enjoy!
