Crazy Chocolate Cake

Paul absolutely LOVES Pam's cakes. They are delicious!
Cake
- 3 cups flour
- 2 cups sugar
- 6 Tbsp cocoa
- 2 tsp baking soda
- 2 Tbs white vinegar
- 1 tsp salt
- 2 tsp vanilla
- 3/4 cup vegetable oil
- 2 cups cold water
- 1 tsp instant coffee (optional)
Chocolate Butter Cream Frosting
- 1 cup butter, softened
- 1 cup Crisco shortening
- 4 cups confectioners' sugar
- 1 Tbsp vanilla
- 2 packets unsweetened cocoa powder (about 1/4 to 1/3 cup)
Cake
Preheat oven to 350 degrees. Grease and flour a 13x9 inch cake pan.
Sift together flour, sugar, cocoa and salt into a bowl. Add vanilla, vegetable oil, and instant coffee. Add 1 cup water a mix, but be careful to not overbeat.
In a bowl combine baking soda and vinegar. Mixture will begin to foam up; add to cake batter. Add 1 additional cup cold water and mix lightly.
Pour batter into prepared cake pan. Bake in preheated oven for 35 to 40 minutes. Cool on wire rack. Frost with chocolate butter cream frosting. Enjoy!
