Egg Salad Sandwich Spread

Ingredients
  

  • 3 pickle jalapeno peppers
  • 12 hard boiled eggs
  • 1/2 cup mayonnaise
  • salt and pepper to taste
  • 1/2 cup chopped pecans

Instructions
 

  • Peel, seed and chop peppers. Peel and chop eggs. Combine eggs, peppers and enough mayonnaise to make of spreading consistency.
  • Add salt, pepper and pecans; mix well. Spread on bread to make sandwiches. Makes 2 cups spread. Enjoy!
