Lime Pineapple Jello Salad

Ingredients
  

  • 1 pkg lime jello
  • 1 pkg cream cheese, softened (8 oz)
  • 1 can crushed pineapple, drained (20 oz can)
  • 3 stalks celery, finely chopped
  • 2 carrots, peeled and grated
  • mayonnaise or sour cream (to garnish)

Instructions
 

  • Prepare jello according to package directions and refrigerate in mixing bowl until syrupy.
  • In a separate bowl, begin beating cream cheese with mixer until smooth. Then, slowly pour in warm Jello, letting it fully combine with the cream cheese. Blend well.
  • Next, place rest of ingredients evenly in bottom of 9x13 inch glass dish. Pour gelatin over all and cover with plastic wrap.
  • To serve, cut Jello into squares and place on lettuce leaf. A small dollop of sour cream or mayonnaise is a nice addition. Makes 12 servings. Enjoy!
