Paris Potatoes
These are a great accompaniment to a baked ham dinner, like Easter!
- 7-8 cups cooked and diced potatoes
- 3 cups creamed cottage cheese
- 1 1/2 cups sour cream
- 1/3 cup minced green onion
- 2 cloves garlic, minced
- 3 tsp salt
- 1 1/2 tsp pepper
- 1 1/2 cups shredded mild cheddar cheese
- 1/3 cup fresh parsley minced
Preheat oven to 325 degrees. Spray a 13x9 inch baking dish with oil. Set aside.
In a large bowl, mix all ingredients together and then spoon into prepared baking dish. Bake in preheated oven for 40 minutes or until hot and bubbly. Makes 8 to 10 servings. Enjoy!
