Paris Potatoes

These are a great accompaniment to a baked ham dinner, like Easter!
Course Side Dish

Ingredients
  

  • 7-8 cups cooked and diced potatoes
  • 3 cups creamed cottage cheese
  • 1 1/2 cups sour cream
  • 1/3 cup minced green onion
  • 2 cloves garlic, minced
  • 3 tsp salt
  • 1 1/2 tsp pepper
  • 1 1/2 cups shredded mild cheddar cheese
  • 1/3 cup fresh parsley minced

Instructions
 

  • Preheat oven to 325 degrees. Spray a 13x9 inch baking dish with oil. Set aside.
  • In a large bowl, mix all ingredients together and then spoon into prepared baking dish. Bake in preheated oven for 40 minutes or until hot and bubbly. Makes 8 to 10 servings. Enjoy!
