- Preheat oven to 350 degrees. Line mini cupcake pans with paper liners. 
- For the filling: In a mixing bowl, using a mixer, combine cream cheese, 1/3 cup sugar, dash of salt and egg until creamy and smooth. Stir in chocolate chips. Set aside. 
- For the cake: In a large mixing bowl with mixer, combine flour, sugar, cocoa, salt, cold water, vegetable oil and vanilla. Mix well until batter forms. 
- Spoon the batter in lined cupcake pans, leaving cups about 1/2 full.  Top the batter with a spoonful of cream cheese filling. Bake in preheated oven for 10 to 15 minutes. Makes about 7 dozen cheesecakes. Enjoy!
