Quick Chicken Soup

Course Soup

Ingredients
  

  • 3 cans chicken broth (14.5 oz each)
  • 2 cups baby carrots
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1/4 tsp celery salt
  • 2 boneless, skinless chicken breast halves, cut into small pieces
  • salt and pepper, to taste
  • 1/4 cup ancini de pepe or other small pasta noodles
  • 1 Tbs chopped fresh parsley or cilantro

Instructions
 

  • In a large saucepan over medium high heat, bring chicken broth to a boil. Add carrots, onion, garlic, and celery salt.
  • Reduce heat to low and add chicken breast pieces, salt and pepper, and pasta. Cover and simmer for 25 minutes. Stir in cilantro or parsley, then serve immediately. Makes four servings. Enjoy!
