18jumbo shrimp (approximately 1 lb), cleaned, peeled & de-veined with tail on
1/2pineapple, cleaned and cut into cubes
1medium orange bell pepper, cut into 1 inch squares
1medium yellow bell pepper, cut into 1 inch squares
1/2red onion, cut into chunks
1barbeque sauce (32 oz)
6metal skewers
Instructions
Prepare barbeque.
Spear shrimp, onion, pineapple, and peppers with skewers. Place on grill. Brush with barbeque sauce and cook approximately 5 minutes per side or until cooked through. Serve immediately over rice. Makes 6 servings. Enjoy!
