The day before serving, place potatoes in pan and cover with water. After water begins to boil, cook for 5 minutes. Grease an 8-inch square pan.
Peel and grate potatoes. Spread a layer of potatoes into prepared pan; sprinkle with salt, repeating the process until all potatoes are used. Pour whipping cream over potatoes; cover and refrigerate overnight.
Preheat oven to 350 degrees. Sprinkle potatoes with grated cheese. Bake in preheated oven for 30-40 minutes. Makes 4 to 6 servings. Enjoy!
