Ziti with Great Northern Beans

Ingredients
  

  • 1/4 cup chicken broth or water
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 1/2 cups chopped tomatoes, either fresh or low-sodium canned (drained)
  • 1 cup canned great northern beans, drained and rinsed
  • 1/2 tsp ground black pepper
  • 1/2 tsp dried thyme leaves
  • 1/2 tsp dried basil
  • 10 oz ziti noodles, cooked al dente and well drained
  • 1/2 cup fresh parsley, chopped

Instructions
 

  • In a medium saucepan over medium high heat, place broth, onion, and garlic. Cook and stir about 5 minutes until vegetables are soft.
  • Add additional broth if necessary during cooking if it becomes too dry. Add the tomatoes and simmer 10 minutes. Add the beans, pepper, thyme, and basil. Simmer 10 more minutes.
  • Serve sauce over cooked ziti and sprinkle with chopped parsley. Serve immediately. Makes 6 servings. Enjoy!
