Arlene and Patti Make Fun Recipes for an End-of-Summer Picnic!

Arlene didn’t do a lot of Labor Day episodes, but technically this “End of Summer Picnic” show from 2010 should count as one. There are lots of fun and easy recipes like a chocolate chip cheese log, beach shrimp, mushroom and cheese bread, fried green beanies, Olympia’s chicken salad croissants, and more! They would all be great for an indoor or outdoor party celebrating Labor Day or Back to School.

NOTE: There were no recipes for the crock pot sausage or the marshmallow fruit dip that Arlene mentions at the end of the show, but both use just two ingredients! The hot sausage is just cooked in a crock pot full of a jar of your favorite salsa, and the fruit dip is just marshmallow cream and block of cream cheese beat together. Easy!

Yummy Mushroom Bread

This is like garlic bread with some seriously good cheesy mushroom filling.
Course Bread

Ingredients
  

  • 1 large loaf Italian bread (not sliced)
  • 1 pound sliced mushrooms, cleaned
  • 5 green onions chopped fine
  • 2 cloves garlic, minced
  • 2 cups shredded mozzarella cheese
  • 1/2 cup melted salted butter (1 stick)

Instructions
 

  • Preheat oven to 350 degrees. Cut loaf of bread into halves lengthwise, and hollow out a little bit of the inside to make room for filling. (Save the pieces for breadcrumbs or another recipe.) Place on a large baking sheet.
  • In a large bowl, mix mushrooms, onions, garlic, cheese, and butter. Fill bread with mushroom mixture. It will seem like a lot, but the mushrooms will cook down/
  • Bake for 15-20 minutes in a 350 degree oven. If the crust starts to get too dark, cover loosely with aluminum foil. Bake until mushrooms are tender and bread is crunchy. Cut into slices. Sevres lots. Enjoy!

Olympia’s Chicken Salad

Ingredients
  

  • 8 boneless, skinless, chicken breast halves, cooked
  • 7 hard-boiled large eggs, finely chopped
  • 3/4 cup celery, chopped
  • 1/3 cup sweet relish
  • 1-1/2 cup Hellmann's mayonnaise
  • salt & pepper to taste

Instructions
 

  • Place cooked chicken into a food processor after cutting it into chunks. Process until chicken is very finely chopped. Place chicken into a large mixing bowl.
  • Add finely chopped eggs, celery, sweet relish and mayonnaise and mix well with a spatula. Taste and adjust seasonings as needed.
  • Serve on crackers, mini croissants, in lettuce leaf wraps, or tortilla wraps, They will all taste good. Makes about 6 cups. Enjoy!

Fried Green Beanies

Instead of french fries, try these at your next party!
Course Side Dish

Ingredients
  

  • 1 lb fresh green beans, stems snipped, and beans uncut
  • 2 large eggs
  • 1 cup flour
  • 1/2 tsp onion powder
  • Flavored bread crumbs
  • Grated Parmesan cheese
  • 2 cup vegetable oil, or more
  • 1 cup Catalina dressing
  • 1 cup blue cheese dressing

Instructions
 

  • Place vegetable oil into a deep skillet over medium heat.
  • Place eggs into a large flat bowl and beat well. Place flour into another bowl and add garlic and onion powder to flour. Mix well. Place bread crumbs into another flat bowl.
  • Place each bean into the flour mixture then into the beaten egg and then into the bread crumbs. Place each bean into hot oil and cook until breading browns and bean is cooked, but not mushy. Drain on paper towel lined plate. While still warm sprinkle with parmesan cheese.
  • In a bowl, combine both dressings and mix well. To serve, place clip in center of plate and place cooked beans around it. Makes lots. Enjoy!

Chocolate Chip Cheese Log

Inform your guests that this is a dessert cheese ball. Tastes like chocolate chip cheesecake!
Course Dessert

Ingredients
  

  • 1 pkg cream cheese, softened (8 oz)
  • 1/2 cup butter, room temperature
  • 1 cup confectioners' sugar
  • 2 Tbsp brown sugar
  • 1/2 tsp vanilla
  • 3/4 cup miniature semisweet chocolate morsels
  • 3/4 cup finely chopped pecans
  • chocolate graham crackers, chocolate wafer cookies, or honey graham crackers

Instructions
 

  • In a medium bowl, beat cream cheese and butter together until smooth. Mix in confectioners' sugar, brown sugar and vanilla. Stir in chocolate morsels. Carefully shape mixture into a log and wrap in waxed paper and then in plastic wrap. Refrigerate for 1 hour.
  • Roll cheese log in finely chopped pecans before serving. Place on serving dish and surround with crackers of your choice. Makes 8 servings. Enjoy!

Beach Shrimp

Ingredients
  

  • 3 lb unpeeled, large raw shrimp
  • 1 bottle Italian dressing (16 oz)
  • 1-1/2 Tbsp freshly ground pepper
  • 2 cloves garlic
  • 2 lemons, halved
  • 1/4 cup chopped fresh parsley
  • 1/2 cup butter, cut up
  • 1 loaf French bread, sliced in chunks

Instructions
 

  • Place first 4 ingredients in a 13-inch-by-9-inch baking dish, tossing to coat. Squeeze juice from lemons over shrimp mixture, and stir. Add lemon halves to pan. Sprinkle evenly with parsley; dot with butter.
  • Bake at 375° for 25 minutes, stirring after 15 minutes. Serve in dish with bread for sopping up the juices. Makes 6 to 8 servings. Enjoy!
  • *Note: 3 lbs. frozen, peeled, large, raw shrimp, thawed according to package directions, may be substituted. Prepare recipe as directed, reducing pepper to 1/2 teaspoon.
