Arlene Makes Blueberry Pie and Shares a Message on Peace

It’s amazing how, even years after a show was recorded, what Arlene had to say can still resonate. That’s because God’s word never gets old. In this special episode, Arlene shares a wonderful recipe for blueberry pie, and then sits down to talk about something God had put on her heart. The world is full of fear and danger, but through Christ, we can have peace.

Fresh Blueberry Pie

Ingredients
  

  • Pastry for double crust 9-inch pie
  • 1 cup sugar
  • 1/3 cup flour
  • 1/2 tsp freshly-grated lemon rind
  • 1 Tbsp lemon juice
  • 4 cups fresh blueberries
  • 2 Tbsp butter
  • milk
  • sugar

Instructions
 

  • Preheat oven 375 degrees. Line a 9-inch pie pan with one pastry crust. Set aside.
  • In a large bowl, combine sugar, flour, lemon rind and lemon juice. Add blueberries and gently toss to coat. Spoon blueberry mixture into pastry-lined pie pan and dot with butter. Cut vents in top pastry or do a lattice topping and flute edges. Brush top with milk and sprinkle with sugar.
  • Bake at 375 degrees for 45-55 minutes, until filling gently bubbles around the edges. To prevent crust over-browning, you may loosely cover edge with foil. Remove from oven and allow to cool at least 30 minutes before cutting and serving. Enjoy!

Well, hello family. We’re so glad you dropped by today. It’s always good to see you. It’s just great, when you come by, and I hope that wherever you’re watching us all over the world now, that if it’s been a good day or a bad day, that you can go on, ’cause sometimes when you’ve had a bad day and many of you stop me, we go to the Walmart, we go to the mall or wherever and you stop and say, “Oh, Arlene, I’ve had such a rough day and I think if I could just get home,” it’s Wednesday night “If I can just get home, I know that I’ll feel better when I watch Arlene.” Well, I hope today you will feel better because we’re gonna talk later on about sometimes we’re disappointed and sometimes when things don’t go our way and we think, oh, that’s not fair. Life isn’t fair, it isn’t always fair. But you know what, God is just, and somehow he has a way of making it all work out. So today we’re gonna cook and then we’re gonna talk. We’re gonna bake a blueberry pie, oh my blueberry pie. There’s nothing like a blueberry pie, good, fresh blueberry pie with fresh blueberries and maybe scoop ice cream on top or little whipped cream or nice, good hot cup of coffee. That’s the kind of comfort food that my mom used to make every once in a while. And she’d say, “Well, tomorrow I’m gonna make pies.” and man, we couldn’t wait till we got home from school to see what kind it would be. It would either be a blueberry or it would be, she’d always make two lemon pies, lemon meringue, ’cause she knew that for a family of five, one was never gonna make it. So if you’ve been intimidated by pie, today we’re gonna show you some quick and easy ways to make I’ll tell you what, there’s no easier way to make a blueberry pie than what I’m gonna show you today. So stay with us, hang in there, don’t go away. In fact, if your mom, your aunt, your brother, whoever isn’t watching, give them a call and tell them, “Hey, Arlene’s on, she’s gonna show us how to make the blueberry pie.” We’re gonna do that just right after the hint.   • [Instructor] Blueberries should be fairly firm and color should be good. Berries do not ripen once picked so choose only bright red strawberries, and plump firm blueberries that are light to dark blue.   • Well the first step in the blueberry pie. Now you can make your own crust if you want to. Personally, I probably haven’t for the last 10 years because you know those little boxes that you get in the refrigerated area, some people use the frozen ones I don’t like the frozen ones. But when you unroll them, they used to be in fours and they’d break apart. They got smart and they just roll them now. And honest, it can’t be any easier than this. You unroll an entire crust, just like that. Perfect, keep pulling it out. And if you’re doing a 10 inch pie, which we’re calling for a nine inch pie, you can take the little bit of flour on it and take your rolling pin and roll it till it’s a little bit larger. Now I just take a little bit of flour on this like that and I pick this up and put it right in my pan. Don’t butter the pan or nothing like that, this is a pie. And then you’re carefully watching don’t pierce it with your fingers, you just wanna make sure that you ease the edges of that pie crust into the pie plate like that. So we already have one crust done, how easy is that? Now we’re gonna take our berries, four cups of fresh blueberries. I usually put those in first, but I found if I mix my sugar, which is a cup, a third a cup of flour, mix that together, stir that around a bit ’cause that needs to mix well just like that. And then I’m gonna add my berries nicely cleaned. then I’m gonna take a lemon, let move my stuff up here. Cause this has some fresh lemon rind and you wanna do that on the very smallest grate, see how small that is and only about a half a teaspoon or so you don’t have to measure it, just give it a couple of good grates over that. You wanna make sure you don’t get the white part, that would be that stuff, it’s real bitter you don’t want that, you want the yellow part only. So you just keep moving it around. You look under there, it’s supposed to be a half a teaspoon, let’s do a little bit more. I don’t think we’re there yet. Amazing what that little bit of lemon does to perk up the flavor. It really is amazing. Just gonna scrape it all off, make sure you get it all in there, top and bottom. And then we want a good tablespoon of juice. No seeds please. These little reamers are great for this and you just do it, give it a good squeeze. So we have our lemon, our sugar, our flour. Now I’m gonna go in here and pull out, I see a seed here. No matter how hard that you try not to get them in somehow some lemons just have a lot of seeds too. You don’t wanna leave that in there ’cause you don’t want somebody’s tooth getting broke on that. Now we mix it up. We want that flour and sugar to coat the berries and coat them well, see how we’re doing here. Get it clear from the bottom, bring it up and over, make sure they coat really, really well. There we go , just like that. Now this goes right into our pie shell. Everything that’s in that bowl comes out and goes right in there like that. And now you’re gonna evenly distribute, it won’t matter that little bit of flour and sugar’s there. The flour’s there to thicken the juice so it doesn’t, cook everywhere, there we go. Now we need a top one, Get this stuff outta here. And we’ll take our top crust, these packages come with two crusts for a top and bottom, if you only need one, just use the one, But you wanna unroll it and this has to come to room temperature you can take it right outta the fridge and think it’s gonna work, it won’t. Okay, little bit of flour. You have to make some vents in the top so that the air can escape. So I just do little V and then I put some slits. These are little vent slits. You can make it decorative. if you have some cute little like cookie cutters, heart shapes, you can do all that, that’s all fun. Before we put this on, we wanna put some butter on top of the berries, more for the crust than for the berries. It just makes the crust flakier ’cause it’s gonna cook it from the underside. Just dotted here and there just a little bit. Now We’re gonna take our crust and carefully lay it over our pie. Now here’s the part that’s important. You want to mesh these two, the bottom crust, show here Larry. See, this is the bottom crust, you wanna squeeze those two together to become one crust so that you don’t have a leak hole. that those berries don’t cook out the juice. You wanna do that the whole way around the pie, clear around, mash them together, just like that. Make sure you got a hold of it, and then you’re gonna turn it under right where you’ve mashed it together, turn it under. Turn it under whole way around the pie, just like that. Now some people take a fork, then they’ll just take the tines of the fork and go around and make a fancy decorative edge to it. I kinda like to flute mine. I know you’re saying “Flute, but that’s something you play.” Well, it is, but it’s also something you do. You flute the pie crust. And if it’s a little thicker, one area, you just squeeze it out a little bit so it’s pretty uniform the whole way around. When you get to this point, then you’ll do your flute. I’ve showed you this before two and one, the whole way around the edge of that pie. So easy, so easy. We make it so hard ’cause we see, we think we’re intimidated by I think, “Oh I could never do that.” sure you could, this isn’t hard. Just keep faithfully the whole way around the edge of the pie. Start this on 375 degrees, look at it after 25, if it’s getting too brown, you can put some foil over the crust. First though, we wanna paint this with milk, the whole crust we’ll paint it with milk. Make sure you get it all cause it’ll brown evenly if you do. Evenly covered, there we go. And then sprinkle with some sugar. This bakes 50 to 55 minutes and oh my blueberry pie. Hot from the oven, just for you, we’re gonna take a break, we come back, I’ve got something I wanna share with you. Well, we’ve put our pie, the blueberry pie into the oven and it’s just gonna bake for about 55 minutes. You wanna check it about 30 minutes so that it doesn’t get too brown. If it does, take a strip of foil and just place it on the outer crust and then continue to bake. In the last five minutes I would take it off, so it’ll be sure to crisp up, okay. You know, the day that we’re taping this, it’s been a very trying day because there’s a whole lot of stuff going on in the world and not good stuff. Stuff that Bible says makes men’s hearts fail for fear. We know we have an enemy, the ultimate enemy to all of us is Satan. He’s the enemy of our soul and he uses people to bring about his destruction. I’ve talked to a lot of people today and before I even came to the studio and everybody said, “Oh my goodness, what are we gonna do?” Actually what happened was, they found a bunch of terrorists, they caught them at Heathrow Airport in England, before they were about to board planes to come to America with explosives. You know, when I was a kid, we never even heard of that stuff, shows how the world has changed dramatically. Even in the last five years, I know it was going on before, but everything was underground. Now it’s blatant and in our faces and no matter it seems like wherever you turn on a national, on an international scope, even in your hometown, in your own state, in your own town, in your own family, there is such turmoil everywhere. Everybody’s troubled about something, everybody’s afraid about something, everybody’s concerned. I’ve never seen so many organizations, so concerned for so much stuff. And I think how did the world ever get along without all these organizations worrying about the whales and the trees. We should not abuse what God placed on this world, but do we need organizations to make man stop being destructive about them? So I was thinking about that and I thought, “Lord, the only place there’s any real peace is in you.” You can’t fly to get away from it because where you fly to go, there’s trouble there. You think you’re safe at a wonderful resort. like those poor people that lost their lives in the tsunami, on the coast of those resort areas, there’s no peace or safety anywhere outside of a relationship with God. God the almighty Jehovah God that we serve. And through Jesus Christ, his son and his ultimate sacrifice at Calvary and the relationship with him and accepting what he did for you and for me, when he died at Calvary, that’s the only way you can have peace. So I was looking, I have this wonderful little book it says God’s promises for your every need and it was given here at Cornerstone Television on an anniversary a long time ago, probably like 15 years or so ago. I just wanna share a couple verses and I want you to think about them. Because the Bible is the only true word that you can bank your life on, it never changes. They’ll change the constitution, they’ll change this, they’ll amend that. Oh, you know, this was the law, no, then we changed those laws five years ago, didn’t you know that? There’s predators with our children, there’re laws for… that’s all changing. I tell you what, it’s amazing that the thing that you put your trust and your confidence in can change that fast. And then you’re left out there like, you mean you changed that and I didn’t even know? This book, the word of the living God, will never change. People can rewrite it anyway they want, but I tell you what if he says he will do it, he will do it. Here’s what the Lord says in Isaiah about peace, “Thou will keep him in perfect peace, whose mind is stayed on Thee, because he trusteth in Thee.” Let me say that again, “Thou will keep him in perfect peace,” perfect peace. To me that means like with no struggles, no worry, no nothing because it’s perfect, complete, total. “Whose mind is stayed on Thee because he trusts.” The only way you’ll have perfect peace is because you have your mind stayed on the Lord and with a mind that is staying on the Lord, trusting him that you’re the Prince of Peace for me and my situation, in my life and my family and I trust you God, to be that peace in our home. When you make that declaration, sometimes it seems like all hell breaks loose. But if you will hold fast to that scripture in Isaiah 26, verse three, he said, he will keep you in perfect peace. Now this was written a little thousands of years ago, but you know what? God knows everything. He knew what we would be facing in the day and age that we’re living now. And he still says, you keep your mind on me and I will give you perfect peace. You have little children that have to be raised and you wonder, oh my goodness, what’s the world gonna be like? When I look at my great nieces and nephews, I think, what do they have to look forward to in the world in 10, 15, 20 years? When I look back at five years and can’t imagine how it’s changed. But see, the only way you can handle that is if you keep that mind stayed on a relationship with the Lord, accept him as your savior, receive him as your friend, your confidant, the one that loves you. I have a message especially for you today and it’s straight from God and he says,” I love you.” There is nothing that you have done that will ever change that fact for God. He may not like your actions, he might not like what you’re doing in your life or what you’re not doing, but he still loves you, that will never change. And it’s his love that he wants returned from you. You say, well, how do I do that? Already you’re in a relationship with the Lord. And here’s all you do, if you want to receive Christ as your savior and make him your Prince of Peace today, you bow your head and repeat after me. Dear Lord Jesus, I am a sinner. I ask you to forgive me of all of my sins, cleanse my heart from all sin, wash me clean. I accept Jesus as my Lord and savior. And I will live for you all the days of my life in Jesus’ name. Amen. If you prayed that prayer with me, I’d like you to go to your phone. I don’t care if this is at two o’clock in the morning, I don’t care if it’s two o’clock in the afternoon, I want you to go to the phone, that number on the screen, 1 8 8 8 6 6 5 4 4 8 3. There is a prayer partner there who would love to pray with you and send you some literature that will help you. You know, you have just been born into the family of God. You say Arlene, well, what do I have to sign? You don’t have to do anything, but pray that prayer with a sincere heart, with the heart that you truly mean, “God, I’m tired of my life, I’m tired of the way I’ve been living. and I need you to change me, I need you to bring peace to my life. You may not be worried about all the situations that are going on in the world, but you may be concerned about no peace in your home. Well, when you invite the Prince of Peace to come there, I tell you what, he brings the peace and get yourself a Bible, begin to read it, find a church where they’re preaching the whole gospel of Jesus Christ and that prayer line number will help you with that wherever you are all over the country. Thank you for accepting Christ as your savior today, you have just stepped through a wonderful door to a great new experience in your whole life. We’ll be right back in just a minute. Well, it’s the blueberry pie ending of the day. And I tell you, look at this baby. It’s just beautifully, evenly brown, it’s got a nice gloss on it, and I tell you what, this is one of those yummy, yummy, oh, look at that. Now this is still a little warm, I hope it’s set up enough. What I like to do is cut the whole way across so you know, depends on how many cuts you’re gonna get. You know how to do this, right? Then you go to the fours, that means you cut each one in half, you get eight. If not, you do threes. Well, you know what? I’m just gonna do a cut and we’re gonna see if we can get this outta here, ’cause I want you to see. I like a crispy crust on the top ’cause I think that that just makes a nice crunch with those wonderful blueberries. Now we’re gonna go down in the side and we’re gonna come up with it. See, it’s still a little warm. Oh, but look at that. Yummy blue, what’s better than warm blueberries just like that. Oh yeah. And then of course you have to put a little something on top, like maybe a scoop of vanilla ice cream. Oh yeah, that would work. Get that out of there. And that ice cream begins to melt just a little bit. Oh yeah. That’s it, that’s the blueberry pie with ice cream. I hope you’ve enjoyed today’s program.
