Arlene and Paul Make Biscuits, Brownies and Momma’s Beef Vegetable Soup!

Arlene told many stories of the years of how her mother was a great cook. In this episode from 2013, she’s making “Momma’s Beef Vegetable Soup,” which is made with ground beef, instead of beef chunks. It’s a long-time family favorite, and the perfect soup to enjoy on a cold winter day.

To go along with the soup, Paul stops by to help make some really easy dinner rolls, which are actually more like biscuits. For dessert, Arlene is making a batch of decadent peanut butter buckeye brownies. Yum!

Momma’s Beef Vegetable Soup

A classic recipe from Arlene's mom.
Course Soup

Ingredients
  

  • 1.5 lbs ground beef
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup chopped onion
  • 4 cups beef broth (32 oz box)
  • 2 cups water
  • 1 bag frozen "soup vegetables" blend (12-16 oz, no broccoli or cauliflower)
  • 2 medium carrots, diced
  • 2 cups peeled, cubed potatoes
  • 1 tbs dry onion soup mix
  • 1 cup chopped cabbage
  • 1 can tomato sauce (8 oz)
  • 1/2 cup uncooked white rice
  • 1 cup uncooked ditalini pasta

Instructions
 

  • In a soup pot, brown ground meat lightly in oil over medium heat. It meat has a lot of fat, drain off the excess grease before continuing. Add the onions and cook with the beef until softened.
  • Add the broth, water, frozen vegetables, carrots, potatoes, and onion soup mix. Bring to a boil. Add cabbage, rice and tomato sauce. Stir well to combine. A more water if it seems too thick. Bring back to a boil. Add pasta and stir well.
  • Reduce heat; cover and simmer for 20-30 minutes or until vegetables, rice, and pasta are cooked through and tender. Taste broth and adjust salt and pepper. Makes 8 to 10 servings. Enjoy!

Peanut Butter Buckeye Brownies

These are easy to make and so delicious!
Course Dessert

Ingredients
  

  • 1 box brownie mix (19 oz)
  • eggs, oil, and milk needed to make brownies
  • 1/2 cup softened butter (1 stick)
  • 1 jar creamy peanut butter (8 oz)
  • 1 cup semi-sweet chocolate chips
  • 6 Tbs softened butter (separate)

Instructions
 

  • Prepare and bake brownie mix in a greased 13×9-inch baking pan according to package directions. Let cool for 1 hour.
  • With a mixer, combine 1/2 cup butter and peanut butter until smooth. Slowly add in powdered sugar and mix until combined and spreadable. Spread mixture over cooled brownies. Chill brownies and icing in freezer for 1 hour.
  • Melt together chocolate chips and remaining 6 Tbs butter in a saucepan over low heat, stirring occasionally. Spread over brownies. Let cool; cut into squares. Makes 2 to 3 dozen. Enjoy!

Really Easy Dinner Rolls

This quick biscuits are so easy, and you can double the recipe if you want more.

Ingredients
  

  • 1 cup self-rising flour (must be self-rising)
  • 1/2 cup milk
  • 3 Tbs mayonnaise
  • 1/2 cup shredded cheddar cheese (optional)

Instructions
 

  • Preheat oven to 375 degrees. Grease 6 muffin cups.
  • In a bowl, combine all ingredients and mix lightly until just combined. Do not over-mix. Spoon dough into prepared muffin cups and place in preheated 375 degree oven for 20 minutes.
  • Remove rolls from cups carefully and place on rack to cool. Makes 6 rolls. Enjoy!
