Cooking 4 Kinds of Pie with Paul! πŸ₯§

Arlene’s husband Paul had always been shy about appearing on camera next to Arlene, preferring instead to help behind-the-scenes during At Home. However, around 2012 she convinced him to start joining her on the show more often. As a result, they made some lovely episodes together where she teach Paulβ€”who did not have a lot of kitchen experienceβ€”how to cook. Today, both Paul and Arlene have passed away, but we can still enjoy these sweet episodes they made together.

In this show, Arlene and Paul make 4 different kinds of pie! Three sweet varieties: blueberry crumb pie, pecan pie, and chocolate cherry pie; and one savory kind: taco pie. Which looks best to you???

Terrific Taco Pie

This is called a "pie," but it can also be eaten like a dip with tortilla chips.

Ingredients
  

  • 1 pound lean ground beef
  • 1 can refried beans (16 ounce)
  • 1/2 cup chopped onion
  • 1 pack taco seasoning
  • 1 cup water
  • 1 cup hot salsa
  • 2 cups shredded iceberg lettuce
  • 2 large tomatoes, chopped
  • 1 cup shredded cheddar cheese (4 ounces)
  • 1/2 cup sour cream

Instructions
 

  • In a large nonstick skillet, cook beef and onion over medium-high heat 6 to 7 minutes, or until browned and onion is soft, stirring frequently; drain off excess liquid.
  • Stir in refried beans, taco seasoning, water and salsa, breaking up mixture with back of a spoon. Bring to a boil, reduce heat to low, and simmer 5 minutes, or until well combined and heated through, stirring frequently. Remove skillet from heat, and place into serving dish, smoothing top. Arrange lettuce, tomatoes, cheese, and sour cream in concentric circles (one inside the next) on top of beef mixture, and serve immediately. Maims 4 to 6 servings. Enjoy!
  • Note: Lime nacho chips are a great addition to this dish.

Blueberry Crumb Pie

Instead of going through the trouble to make a crust for the top, this pie has a tasty crumb topping!

Ingredients
  

  • 1 (9 inch) unbaked pie crust
  • 3/4 cup white sugar
  • 1/3 cup all-purpose flour
  • 2 tsp grated lemon zest
  • 1 tbsp lemon juice
  • 5 cups fresh or frozen blueberries
  • 2/3 cup packed brown sugar
  • 3/4 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 tsp ground cinnamon
  • 6 tbsp butter

Instructions
 

  • Preheat the oven to 375 degrees F.
  • Press the pie crust into the bottom and up the sides of a 9 inch pie plate. In a large bowl, stir together the sugar and flour. Mix in the lemon zest and lemon juice. Gently stir in the blueberries. Pour into the pie crust.
  • In a medium bowl, stir together the brown sugar, oats, flour and cinnamon. Mix in butter using a fork until crumbly. Spread the crumb topping evenly over the pie filling.
  • Bake for 40 minutes in the preheated oven, or until browned on top. Cool over a wire rack. Makes 1 pie. Enjoy!

Oh My! Pecan Pie

A classic old-fashioned pie that will make anyone go "Oh My!"

Ingredients
  

  • 1 (9-inch) frozen pie crust
  • 2 1/2 cups pecans
  • 4 large eggs
  • 1/2 cup sugar
  • 1 cup dark corn syrup
  • 1/2 cup light corn syrup
  • 1 tbsp vanilla
  • Whipped Cream

Instructions
 

  • Preheat oven to 350 degrees.
  • Chop 1-ΒΌ cups of pecans and set aside. In a medium bowl, combine eggs and sugar. Whisk until thoroughly combined. Whisk corn syrups and vanilla into eggs. Add chopped and whole pecans and stir well to distribute.
  • Pour mixture into pie crust. Bake in preheated oven until center is firm, about 50 to 55 minutes. Cool completely on wire rack before slicing. To serve, cut into slices and top with whipped cream. Makes 1 pie. Enjoy!

Chocolate Cherry Cream Pie

This pie is great to make when company is coming, because it is so fast and easy.

Ingredients
  

  • 1 graham cracker crust (9 inch)
  • 1 box instant chocolate pudding mix (4 serving size)
  • 1 container whipped topping (8 ounces)
  • 1 can cherry pie filling

Instructions
 

  • Prepare pudding as directed for pie filling. Chill for 30 minutes.
  • Spread the chilled pudding into crust. Spread whipped topping carefully on top. Spoon cherry pie filling on top of topping.
  • Chill pie for 2 hours before serving. Makes 1 pie. Enjoy!
