Arlene and Patti Make SPICY Mexican Food! 🇲🇽🌶️

With over 400 made, it might be hard to pick a “favorite” episode of At Home, but it’s always a good time to watch Arlene and Patti work together in the kitchen! Patti appeared on the show as far back as 1994, but by the late 2000s, she was a regular almost every week.

Things are heating up in this 2010 episode as Arlene and Patti are making some spicy (and not-so-spicy) Mexican recipes, including insanely amazing jalapeno cheese dip, Jackie’s taco salad, chicken fajita melts, really quick nacho supreme dinner, and guacamole. Yummy!

Insanely Amazing Jalapeno Cheese Dip

Ingredients
  

  • 1 can diced jalapeno peppers (4 oz)
  • 1 cup shredded Parmesan cheese
  • 1/2 cup shredded Cheddar cheese
  • 1 cup mayonnaise
  • 1 can chopped green chilies (4 oz)
  • 1 loaf sourdough bread

Instructions
 

  • Preheat an oven to 350 degrees.
  • Combine jalapeno peppers, Parmesan cheese, Cheddar cheese, mayonnaise, and green chilies in a bowl. Cut the top off of the sourdough bread and hollow out the center to create a bowl. Reserve removed bread and cut into cubes to dip when baked. Fill the bread bowl with the jalapeno mixture.
  • Bake in preheated oven for 30 minutes. Bread cubes may be baked or not. Serve immediately. Makes 2 cups of dip. Enjoy!

Jackie’s Taco Salad

Course Salad

Ingredients
  

  • 1 lb ground beef
  • 1 pkg taco seasoning mix
  • 1 head lettuce, chopped
  • 1 cucumber, peeled and chopped
  • 1/2 cup chopped onion
  • 2 large ripe tomatoes, diced
  • 1 can black olives (6 oz), drained well
  • 1 bag tortilla chips, crunched
  • 3 cups shredded cheddar cheese
  • jalapenos, to taste
  • 1 bottle Catalina dressing

Instructions
 

  • In a skillet, brown ground meat and prepare taco seasoning package as instructed on packet. Let cool completely.
  • In a large mixing bowl, combine lettuce, cucumber, onion, tomatoes, olives, and any other vegetables you might enjoy. Place meat mixture into vegetables and add tortilla chips, cheese and jalapenos. Pour dressing over all and mix to cover. Makes 8 servings. Enjoy!

Chicken Fajita Melts

These cheesy chicken sandwich melts have all of the flavor of fajitas without the drippy mess!

Ingredients
  

  • 3 Tbsp vegetable oil
  • 6 skinless boneless chicken breast halves, thinly sliced
  • 1/2 cup sliced onions
  • 1/2 cup sliced red bell pepper
  • 1/2 cup tomato juice
  • 2 Tbsp taco seasoning mix
  • 1 cup salsa
  • 8 slices French bread, cut 1/2 inch thick
  • 2 cups shredded Cheddar cheese

Instructions
 

  • Heat the oil in a large skillet over medium-high heat. Add the chicken and cook, stirring until lightly browned, about 5 minutes.
  • Stir in the sliced onions and red peppers, and cook and stir for 5 minutes or until the vegetables are tender. Stir in the tomato juice and taco seasoning and mix well. Cook mixture until the juice has thickened and the chicken is well coated with sauce, about an additional 7 minutes.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Spread 2 tablespoons of salsa over each slice of French bread. Evenly spoon the chicken mixture on top of the salsa topped bread. Sprinkle each sandwich with 1/4 cup Cheddar cheese.
  • Place sandwiches under the preheated broiler and cook for 5 minutes or until the cheese is melted and beginning to brown. Makes 8 fajitas. Enjoy!

Really Quick Dinner Nachos Supreme

Ingredients
  

  • 1 lb ground beef
  • 1 pkg taco seasoning mix (1.12 oz)
  • 1 can tomato soup (10.75 oz)
  • 1 1/2 cups water
  • 1 1/2 cups uncooked instant white rice
  • chunky and thick salsa
  • shredded cheddar cheese
  • shredded lettuce
  • jalapenos
  • tortilla chips like Scoops

Instructions
 

  • Over medium-high heat, cook beef and taco seasoning in a skillet until browned. Drain fat.
  • Add soup, water and rice. Bring to a boil. Cover and cook over low heat 5 minutes or until done.
  • Top with salsa, cheese, jalapenos and lettuce. Serve immediately with tortilla chips for dipping. Makes 4 servings. Enjoy!

Homemade Guacamole

A favorite of Arlene's husband, Paul.

Ingredients
  

  • 2 ripe avocados
  • juice of half lemon
  • 1/3 cup finely chopped shallots
  • 3 cloves garlic, chopped fine
  • 3 ripe tomatoes, chopped
  • 1/2 cup crumbled feta or blue cheese
  • 1/3 cup sliced black olives
  • 2 tbsp chopped fresh basil
  • salt and pepper, to taste
  • 2 tbsp red wine vinegar, or more to taste
  • olive oil

Instructions
 

  • Clean avocados and dice into cubes. Place into mixing bowl. Squeeze lemon juice over cubes and mix to coat.
  • Add rest of ingredients except vinegar and oil. Mix well to combine. Add vinegar and oil and mix well. Serve immediately on pizza or with tortilla chips, eggs or wherever you would use salsa. Makes 2 cups. Enjoy!
