Maple Drizzled Apple Muffins
Great as a snack, breakfast, or anytime treat, everyone loves these muffins.
Muffins
- 1 1/3 cup all purpose flour
- 1 cup quick cooking oatmeal
- 2/3 cup white sugar
- 1 Tbsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/2 cup milk
- 1/3 cup melted butter
- 1/4 cup real maple syrup
- 1 egg (beaten)
- 2 cups peeled and chopped apples
- 12 pecan halves
Maple Glaze
- 1/3 cup powdered sugar
- 2 Tbsp real maple syrup
Preheat oven to 400 degrees. Line 12 muffin cups with papers.
In a large bowl, combine the flour, oats, sugar, baking powder and cinnamon. In a small bowl, mix milk, butter, syrup and egg; stir into dry ingredients just until moistened. Fold in apples.
Fill paper-lined muffin cups three-fourths full. Top each with a pecan half. Bake in preheated oven for 18-20 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Enjoy!
