Happy New Year, At Home Family! In this special episode, Arlene makes a batch of apple-maple muffins, and then invites her friend Laura Walker into the kitchen. The two share thoughts on the New Year and talk about the new opportunities God gives to us every day. ❤

When you look back on last year, how do you feel? Are you satisfied with how things went? Are you upset? Sometimes it seems the year goes by so fast, that we don’t finish everything we wanted to. We feel guilty for things left undone. The Bible says that God’s “mercies are new each morning,” meaning that he never stops forgiving us. He can wash away all our guilt and regret. Rather than feel bad about the past, let us look forward to this new year. With God’s strength, and ONLY by trusting in him, we know we can feel good about what lies ahead.

Maple Drizzled Apple Muffins

Great as a snack, breakfast, or anytime treat, everyone loves these muffins.
Course Breakfast

Ingredients
  

Muffins

  • 1 1/3 cup all purpose flour
  • 1 cup quick cooking oatmeal
  • 2/3 cup white sugar
  • 1 Tbsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1/4 cup real maple syrup
  • 1 egg (beaten)
  • 2 cups peeled and chopped apples
  • 12 pecan halves

Maple Glaze

  • 1/3 cup powdered sugar
  • 2 Tbsp real maple syrup

Instructions
 

  • Preheat oven to 400 degrees. Line 12 muffin cups with papers.
  • In a large bowl, combine the flour, oats, sugar, baking powder and cinnamon. In a small bowl, mix milk, butter, syrup and egg; stir into dry ingredients just until moistened. Fold in apples.
  • Fill paper-lined muffin cups three-fourths full. Top each with a pecan half. Bake in preheated oven for 18-20 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Enjoy!
