Cooking Easy Casseroles and Salad with Paul!

This is another one of those great “Paul episodes” of At Home, filmed in early 2013. Today he’s joining Arlene to help make some easy casserole recipes, including chicken supreme and creamy ground beef and noodles. Plus, Paul also helps make a big Italian salad. It’s a relaxing show filled with easy recipes anyone can make for a busy weeknight dinner.

Italian Salad and Dressing

Paul was the salad man, and loved helping Arlene by cutting up vegetables.

Ingredients
  

  • 1 bunch Romaine lettuce, torn in pieces
  • 2 heads Bibb lettuce, torn in pieces
  • 2 tomatoes, quartered
  • 1 cucumber, peeled and sliced
  • 1 red bell pepper, sliced
  • 1 purple onion, sliced
  • 3/4 cup olive oil
  • 1/4 cup red wine vinegar
  • dash Worcestershire sauce
  • 2 large garlic cloves, pressed
  • 1/2 tsp pepper
  • 1 tsp salt

Instructions
 

  • In a large salad bowl, place lettuce, tomatoes, cucumbers, red pepper and onion.
  • In a bowl, mix together olive oil, vinegar, Worcestershire sauce, garlic, pepper and salt. Pour over salad and toss gently. Makes 8 servings. Enjoy!

Chicken Supreme Casserole

This casserole has big chicken flavor and a crunchy topping everyone will love.

Ingredients
  

  • 6-9 boneless skinless chicken breasts
  • 1/2 lb sliced Swiss cheese
  • 2 cans cream of chicken soup (10 1/2 ounces, each)
  • 3/4 soup can water
  • 3/4 pkg stuffing mix (15 ounces)
  • 1/2 cup melted butter
  • cooking spray

Instructions
 

  • Preheat oven to 350 degrees. Spray a 13 x 9-inch baking dish with cooking spray.
  • Cut chicken breasts into serving pieces. Place chicken in the bottom of the baking dish and layer cheese slices over chicken.
  • In a bowl, combine soup and water and whisk until creamy. Pour mixture over chicken and cheese in baking dish.
  • In another bowl, combine stuffing mix and melted butter. Mix well and spoon over the soup, covering the entire top of casserole. Place in preheated oven and bake for 35 to 45 minutes or until chicken is tender and topping is browned. Makes 6 servings. Enjoy!

Creamy Ground Beef Noodle Casserole

Packed with cheese, noodles, and beef, this is one hearty dinner!

Ingredients
  

  • 1 lb wide noodles
  • 1 container creamed cottage cheese (24 ounces)
  • 1 container sour cream (16 ounces)
  • 1 cup chopped green onions
  • 2 lbs ground beef
  • 1/2 tsp salt and pepper (each)
  • 1 tsp garlic salt
  • 2 cups spaghetti sauce
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup grated parmesan cheese

Instructions
 

  • Preheat oven to 350 degrees.
  • Cook noodles according to package instructions. Drain and set aside.
  • In a bowl combine cottage cheese, sour cream and green onions. Set aside.
  • In a skillet, over medium heat, brown the ground beef breaking it up with a spoon. When browned, drain any accumulated fat. Add salt, pepper, garlic salt and spaghetti sauce to meat. Blend and cook until hot and bubbly.
  • Layer noodles in a deep 9 x 13-inch ovenproof dish. Cover with cream mixture, then with meat mixture. Top with grated cheeses and bake in preheated oven for 25 to 30 minutes until hot and bubbly. Makes 6 to 8 servings. Enjoy!
