Arlene and Patti Make Lots of Pizza, Plus Guacamole!

Can you believe that Arlene’s husband, Paul, used to not like pizza? Arlene said they hardly ever ordered pizza, because he just didn’t like it. But as time went on, he began to change his mind. In fact, one of his favorite ways to eat pizza was with guacamole on top! It might seem kind of strange, but Arlene said he loved it.

In this episode from 2010, Arlene is making pizza with Patti, as they cook up a chicken garlic pizza, a tomato pesto pizza, a bacon tomato squares pizza, and a fruit dessert pizza! Plus, Arlene makes homemade guacamole for Paul.

Chicken Garlic Pizza

This pizza can be considered a meal in itself.

Ingredients
  

  • 1 boneless skinless chicken breast, cooked and cut into strips
  • 3 tbsp butter, softened
  • 3 cloves garlic, minced
  • 2 tbsp chopped green onion
  • 1 tsp dried basil
  • 1 can refrigerated pizza crust dough (10 ounce)
  • 1 1/2 cups shredded provolone cheese
  • 3 Roma tomatoes, diced
  • 1/8 cup chopped fresh cilantro
  • 1/2 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese

Instructions
 

  • Preheat oven to 350 degrees.
  • In a small skillet over medium heat, melt butter with garlic, onion and basil. Pour into a chilled dish to cool, and refrigerate until set.
  • Roll out pizza dough place onto a pizza pan or other baking sheet and spread the herb butter over surface using back of a spoon. Sprinkle with parmesan cheese and l /2 cup shredded provolone cheese. Arrange chicken on top, then dot with ricotta cheese. Top with tomato slices, cilantro and parmesan cheese. Sprinkle additional shredded provolone cheese over all.
  • Bake in preheated oven for 15 to 20 minutes, until crust is browned and center is cooked through. Makes 12 to 1 5 servings. Enjoy!

Petso Pizza

If you don't love red sauce, this pesto-tomato pizza is for you.

Ingredients
  

  • 1 ready made pizza crust
  • 1/2 cup pesto sauce
  • 1 cup ricotta cheese
  • 1/4 cup Romano cheese
  • 2 tomatoes, sliced
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Preheat oven to 450 degrees.
  • In a small bowl, combine ricotta and Parmesan cheeses.
  • Spread pesto over the ready to cook pizza crust. Spread the ricotta and Parmesan over the pesto, and layer the tomatoes over the cheese. Sprinkle with additional Parmesan cheese.
  • Bake in preheated oven for 12 to 15 minutes. Serve immediately. Makes 8 slices. Enjoy!

Tomato Bacon Pizza Squares

This is a like a BLT but in pizza form!

Ingredients
  

  • 9 slices bacon
  • 1/3 cup chopped green bell pepper
  • 1/3 cup chopped onion
  • 4 Roma tomatoes, seeded and chopped
  • 1 tsp dried basil
  • 4 tbsp mayonnaise
  • 2 cloves crushed garlic
  • 1 refrigerated pizza crust dough
  • 1 cup shredded Swiss cheese

Instructions
 

  • Preheat oven to 425 degrees.
  • Place bacon in a large skillet over medium heat. Fry bacon until crisp. Drain on paper towels.
  • Crumble bacon into a medium-sized mixing bowl. Mix in bell pepper, tomatoes and basil. In a separate small bowl, combine mayonnaise and garlic.
  • Roll pizza crust into a 12 inch by 15 inch rectangular baking sheet. Place on jellyroll pan and bake in preheated oven for 10 minutes. Remove from oven and spread mayonnaise mixture evenly over crust. Sprinkle bacon mixture over mayonnaise, and top the entire pizza with cheese.
  • Return to oven and bake for 18 to 20 minutes or until top is bubbly and the crust is golden brown. Cool and cut the pizza into 24 squares. Enjoy!

White Chocolate Fruit Pizza

Pizza for desert? You bet!

Ingredients
  

  • 1 pkg Pillsbury refrigerate sugar cookie dough
  • 2 cups vanilla chocolate baking chips
  • 1/4 cup heavy cream
  • 1 pkg cream cheese (8 ounce), softened
  • 1 quart strawberries, sliced
  • 2 pints blueberries
  • 1 pint raspberries
  • 1 can mandarin oranges, well drained
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1 cup pineapple juice
  • 1 tsp lemon juice

Instructions
 

  • Preheat oven to 400 degrees. Press cookie dough into pizza pan making raised edge with crust. Bake crust in preheated oven for 15 minutes, or until cooked through. Let cool.
  • In medium microwave safe bowl, microwave vanilla chips and cream on high for 60 to 90 seconds, or until chips are melted and smooth after stirring. Beat in cream cheese with electric mixer until creamy. Spread on cooled cookie crust.
  • Arrange sliced fruit'' decoratively over filling. In a medium saucepan over medium heat, combine 1 /2 cup sugar, cornstarch, pineapple and lemon juices. Stir and cook until sugar dissolves and mixture thickens. Pour over fruit. Refrigerate until serving. Makes 1 pizza. Enjoy!

Homemade Guacamole

A favorite of Arlene's husband, Paul.

Ingredients
  

  • 2 ripe avocados
  • juice of half lemon
  • 1/3 cup finely chopped shallots
  • 3 cloves garlic, chopped fine
  • 3 ripe tomatoes, chopped
  • 1/2 cup crumbled feta or blue cheese
  • 1/3 cup sliced black olives
  • 2 tbsp chopped fresh basil
  • salt and pepper, to taste
  • 2 tbsp red wine vinegar, or more to taste
  • olive oil

Instructions
 

  • Clean avocados and dice into cubes. Place into mixing bowl. Squeeze lemon juice over cubes and mix to coat.
  • Add rest of ingredients except vinegar and oil. Mix well to combine. Add vinegar and oil and mix well. Serve immediately on pizza or with tortilla chips, eggs or wherever you would use salsa. Makes 2 cups. Enjoy!
