Arlene Makes 3 Beef Quickies

Do you ever just marvel at all the tasty things you can make with ground beef? From soups to burgers, meatballs to casseroles, stuffed peppers to baked beans, ground beef is a versatile ingredient you can never have too many recipes for!

Arlene loved easy recipes that any home cook could make, and in this episode from 1994, she’s demonstrating easy recipes for ground beef. Quick, filling, and delicious, the three dishes in this show offer a wide variety of things you can make for friends and family: spicy beef patties, easy and elegant meatballs, and western mac & cheese. Yum!

Western Mac and Cheese

Course Main Course

Ingredients
  

  • 1 pkg macaroni and cheese dinner (7 1/2 oz)
  • 1 lb ground beef
  • 1/2 cup sliced celery
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 2 cups drained whole kernel corn (1 lb can)
  • 1 can tomato paste (6 oz)
  • 1/2 cup water
  • 1 tsp salt
  • dash pepper

Instructions
 

  • Preheat oven to 350 degrees.
  • Prepare macaroni and cheese dinner according to package directions.
  • In a large skillet, brown meat. Add celery, green pepper, and onion and cook until tender.
  • Stir into meat mixture corn, tomato paste, water, salt and pepper. Add macaroni and cheese. Mix and combine thoroughly. Bake for 15-20 minutes. Makes 4-6 servings. Enjoy!

Spicy Beef Patties

Seasoned with oregano, fennel, and pepper, these are a fun twist on regular hamburgers.

Ingredients
  

  • 2 1/2 lbs ground beef
  • 2 tsp salt
  • 1/8 tsp pepper
  • 1 tsp oregano
  • 1/4 tsp fennel seed
  • 6-8 hamburger rolls

Instructions
 

  • Preheat broiler.
  • Combine ground beef, salt, pepper, oregano and fennel seed. Shape into 6-8 patties, 1/2 inch thick. Broil 3-4 inches from the heat source for 6-7 minutes on one side. Turn and broil other side for 5-8 minutes, or to desired doneness.
  • Place patties on rolls and serve immediately. Makes 6-8 servings. Enjoy!

Easy Elegant Meatballs

Ingredients
  

  • 2 lbs ground beef
  • 1 cup packaged herb-seasoned stuffing crumbs
  • 3 eggs
  • salt and pepper to taste
  • 1 bottle chili sauce (12 oz)
  • 1 jar grape jelly (6 oz)
  • lemon juice

Instructions
 

  • In a large bowl, combine ground beef, stuffing crumbs, eggs, salt and pepper and mix thoroughly. Shape into small, cocktail-sized meatballs and set aside.
  • In a large saucepan, combine chili sauce, grape jelly and a squeeze or two of lemon juice.
  • Transfer meatballs to sauce and cook on low heat for about 30 minutes, stirring occasionally. Refrigerate overnight or freeze for future use.
  • When ready to use, spoon mixture into a large saucepan and cook on low heat about 30 minutes, skimming off any fat. Stir occasionally. Serve immediately. Makes about 30 meatballs. Enjoy!
