Arlene and Tammy Make an Easy Soup & Sandwich Supper! πŸ₯£πŸ₯ͺ

When you’re in a hurry, it’s nice to have some easy recipes for a quick meal. In this episode from 2012, Arlene and Tammy whip up a tasty soup and sandwich supper. Recipes include a hearty beef vegetable soup, “kicked-up tuna melt” sandwiches, baked cheesy sandwiches, and for desert, the aptly named β€œpeach stuff!”

Beef Vegetable Soup

Fast, easy, and hearty, your family will love this soup!
Course Soup

Ingredients
  

  • 1 lb boneless beef sirloin steak, cut into 1/2" cubes
  • 1/4 tsp black pepper, divided
  • 2 tsp olive or canola oil
  • 2 cans beef broth (14.5 oz, each)
  • 2 cups peeled and cubed potatoes
  • 1 1/4 cups water
  • 2 medium carrots, peeled and sliced
  • 1 Tbs dry onion soup mix
  • 1 Tbs dried basil
  • 1/2 tsp dried tarragon
  • 2 Tbs corn starch
  • 1/2 cup additional beef broth or water

Instructions
 

  • Sprinkle steak cubes with 1/8 tsp pepper. In a dutch oven over medium-high heat, brown steak in oil in batches. Once steak is browned, add the broth, potatoes, water, carrots, onion soup mix, basil, tarragon, and remaining pepper.
  • Bring soup to a boil, reduce heat to a simmer, and cook for 20-25 minutes, until vegetables are tender.
  • To thicken soup, wisk cornstarch and water/broth in a small bowl until smooth. Slowly pour into soup while stirring constantly. Bring to a boil and cook for a minute or two until the soup thickens. Serve hot. Makes 7 servings. Enjoy!

Kicked Up Tuna Melts

This takes a classic sandwich and makes it even better!
Course Main Course

Ingredients
  

  • 4 cans solid white tuna, packed in water, drained (5 oz each)
  • 1/3 cup mayonnaise, plus more
  • 1/4 cup finely chopped red onion
  • 4 tsp capers, rinsed, drained and chopped
  • 1 Tbs fresh lemon juice
  • 1/2 tsp coarse kosher or sea salt (or 1/4 tsp table salt)
  • 1 tsp black pepper
  • 1/4 tsp dried oregano
  • 4 slices crusty white bread
  • 8 thin tomato slices
  • 4 slices provolone or Monterey Jack cheese

Instructions
 

  • Preheat oven broiler to 500 degrees, with rack in the highest position.
  • In a medium bowl, combine tuna, 1/3 cup mayo, onion, capers, lemon juice, salt, pepper, and oregano, and stir until thoroughly combined.
  • Arrange bread slices in a single layer on baking sheet, and spread the top of each with a little mayonnaise. Divide tuna mixture evenly among slices, then top each with 2 slices of tomato and 1 slice of cheese.
  • Place baking sheet under the broiler and broil until the cheese is golden brown and bubbling, about 2-4 minutes. Each broiler is different, so you need to WATCH the sandwiches so they do not burn! The cheese will be toasty and melted, but the tuna salad will stay cool and creamy underneath. Makes 4 open-faced sandwiches. Enjoy!

Baked Cheesy Sandwiches

These are like little grilled cheeses, wrapped up to go!

Ingredients
  

  • 1 can refrigerated crescent roll dough
  • 4 slices cheddar cheese (about 1 oz each)
  • 4 slices mozzarella cheese (about 1 oz each)
  • 1 Tbs butter, melted
  • 1 Tbs sesame seeds OR grated Parmesan cheese

Instructions
 

  • Preheat oven to 375 degrees. Separate or cut dough into 4 long rectangles. Press perforations in the dough to seal edges. Place 1 slice of cheddar and 1 slice of mozzarella on one side of each of the 4 rectangles. Fold empty side of dough over top and press edges with a fork to seal the cheese inside.
  • Place sandwich pockets on an ungreased cookie sheet. Brush tops with melted butter and sprinkle with sesame seeds or Parmesan cheese. Bake at 375 degrees for 12-15 minutes, or until dough is golden brown. Serve warm. Makes 4 sandwiches. Enjoy!
  • Note: You can also add deli lunchmeat to these sandwiches, too!

Peach Stuff

Not sure if this is technically a "dump cake," a cobbler, a crisp, or something else. But it is good!
Course Dessert

Ingredients
  

  • 2 large cans sliced peaches in syrup, do not drain (28 oz cans)
  • 1 box butter pecan or yellow cake mix
  • 1/2 cup butter, melted
  • chopped pecans (optional)

Instructions
 

  • Preheat oven to 375 degrees. Grease a 13×9" baking dish.
  • Pour peaches into prepared baking dish and sprinkle dry cake mix all over the top. Drizzle melted butter over cake mix. Top with chopped nuts, if you like.
  • Bake in a preheated oven for 25-30 minutes, or until the top begins to brown. Serve warm with ice cream. Makes 12 servings. Enjoy!
