Do you have an old family recipe that everyone loves? For Nikki Stello, his family recipes turned into a booming business! Stello Foods started in the early 90s when Nikki Stello and his friends turned a college project into a real-world business, producing and selling jars of “Rosie’s Red Pepper Spread” and other homemade sauces.
The homemade operation soon grew into Stello Foods, Inc. In 1995 Nikki and his mother Rose Marie stopped by the At Home kitchen to share some tasty ways to use the sauce, including homemade stromboli and an easy cream cheese dip. Yummy!
Today, Stello Foods has grown even bigger, and they still sell Rosie’s Red Pepper Spread, along with lots of other great products on their website and in stores around Pennsylvania.
Note: We don’t have the hot sausage recipe seen in the show, but it appears to just be Italian sausage cooked in marina sauce, served on rolls with Rosie’s Red Pepper Spread on top.
Rosie’s Stromboli with Rosie’s Red Pepper Spread
Ingredients
- 1 batch homemade or store-bought pizza dough
- 2 cups shredded white American cheese
- 2 cups shredded extra sharp white cheddar cheese
- 2 cups sandwich style pepperoni, shredded or chopped
- 6 oz Rosie's Red Pepper Spread (Hot, Mild, or Sweet)
- 1 cup fresh basil leaves, washed and patted dry
- 1 cup fresh parsley, washed, patted dry, and chopped
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat oven to 350 degrees. Grease a large sheet pan, and push or roll dough until it completely covers the bottom in one flat layer.
- Leaving a 1" border, sprinkle shredded pepperoni onto dough. Spoon red pepper spread on top of pepperoni.
- Make sure the basil and parsley are patted dry with paper towels, then add evenly on top of sauce. Evenly sprinkle 3 cheeses over entire stromboli.
- Starting at one wide end, roll the stromboli together tightly, making sure all the ingredients stay inside. Pinch the seam and the ends shut, so the sauce doesn't leak out.
- Bake in a preheated oven for 45 minutes, until dough is browned and golden. Let rest 10 minutes before cutting. Enjoy!
Rosie’s Red Pepper Cream Cheese Spread
Ingredients
- 3 Tbs white vinegar
- 3 Tbs white sugar
- 1 Tbs corn starch (optional)
- 1 egg
- 1 Tbs butter
- 8 oz cream cheese (1 block)
- 6 oz Rosie's Red Pepper Spread (Hot, Mild, or Sweet)
Instructions
- Add first five ingredients to sauce pan and heat on low, whisking constantly.
- In a separate bowl with electric mixer, whip the cream cheese.
- When the heated mixture bubbles, slowly add into cream cheese with the mixer running. Mix thoroughly. Then mix in the Red Pepper Spread.
- Can be served hot or chilled. Great for dipping bread, chips, crackers, or veggies. Enjoy!

Well, hello and how are you today? Welcome to At Home, we’re glad that you could be with us. Today we’ve got some really special guests. I love it when guests drop by because this family and really it’s Rosie who’s, her name is Rosie Stello and her son Nickki and they’re here from Stello Foods, Incorporated. And they’re out of Punxsutawney, Pennsylvania. All you people all around the country you know about Punxsutawney because that’s where the groundhog makes his presentation every February. But there’s another reason why you should be knowing Punxsutawney. That’s because Stello Foods, who makes incredible peppers. I mean, you’re in for a treat. I mean, you’re gonna have to you’re just gonna have to get some of these because they are so good. Tell you what happened. The girl that works here with us on At Home. Her name is Sandy. Now you’ve seen her in a variety of positions. One time she was crawling on her hands and knees behind the set. All you could see was the top of her head. Another time she’s working in the oven you know. But really she came in one day and she had a jar of these peppers and she said, “Arlene you have to taste this.” Sandy likes hot peppers, she likes anything hot. And, this is Red Pepper Spread. Now, this comes in a variety of strengths and she had the hot. And so she’s comes up to my desk, she says, “Taste this Arlene.” We taste it. We enjoyed it, she said “You think we could ever get these people on the program? Because they gotta do stuff with hot peppers.” Now, if you like hot stuff, like hot sausage and things that you have a hot you you’re going to love this. And I said well we’ll try. So we looked in on the side of the jar was the address and the name and all of that. We gave them a call. It turns out this is the most wonderful family because there’s a great story. Only in America, I want to say, this great country that we live in. I contacted Stello foods. And Nickki, who is the son of Rosie he answered the phone and we started talkin’; I told him I would like to invite him to the program. Well it just so happens I found out after we made the arrangements they are going to be here today. That, when he sent the letter to me to tell me that they were coming and what they would be doing a paragraph in the letter, now this I appreciate, he says “We take pride in the quality of the products that we manufacture and the friendly services that we provide. We are totally committed to making quality products. It is nice to know that there are people out there who still appreciate the home-style touch that we add to every jar.” That’s great. Then he said, “If my grandparents were still with us I know how excited they would be about the opportunity that you are giving us. Yeah.
She must’ve been a neat lady, huh?

Well she had to be if she’s watching my program, right?

Now. Nickki I was so it was so nice to talk with you and to meet you via the phone and I got to meet Rosie today when you came here to the At Home set and you had a wonderful success story that you’ve told me about this before you start telling me that we’re going to get Rosie to demonstrate some things making a stromboli and using their peppers, pepper spreads. We’re gonna go down the whole gamut. So we’re gonna talk and she’s gonna be preparing the foods, okay? What are you gonna make for us, again?
We’re gonna make stromboli with a pepper spread.

Sure
And just tell us what you’re gonna do. Basically.
We’re gonna just push the dough on the pan

Now, what kind of dough is this, this is the dough you made?
This is a homemade dough, yes.
Homemade dough.
Yes. And then you just push it on, you don’t want to roll it, and then we’ll start layering the
You go ahead, I’ll talk to Nickki, okay?
Okay.
Well Nickki you told me how that this was a project when you were in college?
Yeah.
to prepare something like this?
Yeah.
Tell me about it.
I had a for my senior year in college. I had a small business management class, and I had to do a business plan and we didn’t have a business, and we had always my family it always made the pepper spread and just gave it to friends.
Well where did you get the original recipe?
The original recipe was my grandparents recipe.
Okay.
And then we decided to do the business plan on on this fictitious pepper business.
Oh okay.
That we’ve always talked about. So we did it and it looked good on paper then they got a B in the class, so, not too bad, but then there was me, my dad and my sister, and two of our family friends, David Daughenbaugh and Richard Weaver. We’ve all formed a partnership. And David’s family had an old dairy farm. So, we raised our own peppers and tomatoes.
Wow, that’s neat!
Yep, for the first two years, we grew our own peppers and tomatoes.
And, I think someone told me that the first jar really happened on your grandfather’s patio.
Yeah.
Is that where.
We actually like, we made a hundred jars, the first year
[Arlene] Sure. [Nickki] On my grandparent’s patio. And, my grandparents helped. [Arlene] Aw, that’s neat. [Nickki] ‘Cause they were still living. [Arlene] How long ago was that? [Nickki] That was five years ago. [Arlene] Five years ago.Yeah, this is our fifth year in business.
[Arlene] Wow, that’s great. Now, tell me a little about the product, it’s a pepper spread.Yes, what it is, it’s a ground red bell pepper in a tomato sauce, and then we add a hot pepper, a certain ratio of hot peppers to make a hot and a mild. The sweet is just nothing but the red bell pepper.
[Arlene] Okay, and that’s the, you have hot and sweet, when it comes to [Nickki] Well, we have a hot, mild, and sweet. [Arlene] Hot, mild and sweet, [Nickki] Yep. [Arlene] Yep, right. Okay, then you have Hot RingersHot Ringers.
Okay, tell me about the Hot Ringers.
Well, actually a friend of ours gave us this recipe for these Hot Ringers and they actually had a lot of different ingredients in, like, they had zucchini, and
[Arlene] OhAnd carrots, and all types of different stuff.
[Arlene] Uh huh.But, my mom, she’s good at doctoring recipes. So, she got the recipe and kinda added some ingredients and took out some ingredients and we finally came up with the final Ringer recipe.
I have never met an Italian who did not know how to doctor a recipe to make it taste the way the want it to taste, right?
Yeah.
I mean, so it’s a basic thing. That’s what, you know, we talk about here At Home all the time, if we make something and it’s not something that you’re gonna like, so change it, make a variety. And, that’s what these are.
She does it all the time.
Does she?

Okay, can we have the name the full name and the address and phone number, because you told me that you ship this stuff all over the country?
Yes, yes, we do do mail order. We ship packages all across the United States. All you have to do is call us, and we’ll give you the prices and take care of it.

And, then, you’re, you don’t want to put your sauce on first, because it’ll go through.
Ah.
It’ll be too wet for the dough.
All right, now what’s this?
Now this is, you put your sliced up rolls in, put it in the Cuisinart.
[Arlene] What is it? [Rosie] Pepperoni. [Arlene] Pepperoni! [Rosie] Sandwich style pepperoni. [Arlene] Oh, that, the bigger, softer [Rosie] Yes [Arlene] Kind of pepperoni. [Rosie] Or the small one. [Arlene] And, you just make it real fine. [Rosie] Or mild, I like mild. Uh huh. I like everything real fine in the Cuisinart.Yeah.
Yeah.
Okay,
Layer that.
So you adjust it to your own fashion, you don’t have to put a whole lot
Right
a little bit or whatever, right?
Right Uh huh
Okay, now this is going to be a stromboli like you’ve probably never tasted. And, if you don’t have the pepper spread, or their product to put on, it’s not going to taste the same. Right?
Yes, that’s right.
What do we need? Some of this?
Some of the sweet.
What kind?
We want the sweet.
‘Cause that’s hot. Okay, where’s the sweet? Okay, it’s here. That’s hot. Hey!
It’s on the bottom.
On the bottom shelf. There we go, we got sweet.
Okay.
Oh, you’re gonna have to open it. Now, do you use like a whole jar on that?
Ah, half a jar.
[Arlene] Half a jar?Yeah.
[Arlene] Look, this is just the way it comes out. [Nickki] Yeah.Of that jar. Oh, and it tastes so…
Yeah, I can do that for ya.
We were eatin’ it on pretzels, can you believe that? We were so hungr– she brought that in that day it tasted do good, ’cause it was so different. I’m telling you, if you like stuff, if you like unusual things, you’re going to like this. And, you’re going to find just gobs of recipes to put this on. You could do this on scrambled eggs, you could make a frittata, you could use it an accompaniment to meats. There’s like no limitations for this product
Actually,
[Arlene] And, there’s not anything quite like it that I’ve seen. [Nickki] There’s a poem on the side of the jar. [Arlene] Oh yeah? [Nickki] My sister created a poem for every product. [Arlene] Oh, neat! [Nickki] And, you read through the poem and it’ll tell you what to do with it.Really?
How to use it, yeah.
Lemme see that, Rosie. I gotta see what the poem says here. Okay, Rosie’s Red Pepper Spread, the food to eat when you want fed. Eat it on crackers, or pizza, or bread, it’s made from tomatoes and peppers that are red. Use it as a side-dish with eggs or meat, use it on a hot dog, the flavor can’t be beat. Dip veggies and chips, the varieties are neat, put it in an omelet, stromboli or sauce, and get ready to eat. The more creative you are, the more uses there are. Rosie’s Red Pepper Spread, the best by far. What a poet she is, she’s good!
Yeah, she’s, she’s pretty good.
Okay, now what’re we putting on here now? Is this…

But, I see it got I did freeze it and see it got watery. You can’t have anything too watery.
[Arlene] But you can do fresh parsley, right?Yes, this was fresh parsley

And, I, yes

Yes. But you don’t want it too wet.
Now, this is a big stromboli, huh? This is full of some goodies here.
Yeah, it is. And, if I get too much stuff in it, it won’t roll and it’ll break apart.
Yeah, but it still tastes good. Doesn’t everybody break some of ’em. My dad used to say, “we don’t care if the cake breaks or not if it tastes good, who cares if it breaks?” You know, sometimes, if they’re perfect they don’t taste so good. They’re dry. All right, now.
And, that’s the sharp cheese a little bit more.
A little more sharp cheese, okay.
I don’t think I should put a lot.
What’s this kind of cheese?
And that’s parmesian, just grated parmesian.
Okay
Or whatever you prefer.
And just do it lightly, huh?
That’s it, sure.
Now, show me how you’re gonna roll this, ’cause I’d be fascinated with this.
That is tricky. I think I already put too much stuff on it.

So, it’s probably going to break, but it’ll be good.

[Nickki] Yeah, ’cause we eat ’em pretty fast. [Rosie] I can’t make them fast enough. [Arlene] That’s just what I was going to say. [Nickki] Whenever we’re down there workin’, mom’ll make, cook for us. [Arlene] Oh, neat. [Nickki] And, they come down there, they don’t, with five guys, they don’t last too long. [Arlene] Now, do you have Do you have a building where your business is,Yes.
Or are you still doing it out of a home.
No, well we actually we moved from the grandparent’s patio, into our basement

So, we could get inspected by the State of Pennsylvania, to sell our products anywhere in the state of Pennsylvania.
Wonderful.
We stayed there for two years. And, then we moved in, we got a building in Punxsy, renovated ourselves,
[Arlene] Great. [Nickki] Did all the work ourselves, and then we got registered with the Federal Government, so now we can sell our products anywhere in the United States. [Arlene] That tremendous. That is just great. All right, so now she [Rosie] Yeah, I don’t want to roll [Arlene] It’s not too bad, though, it doesn’t look too bad.You don’t want to roll it with a rolling pin, because you’ll never get that

Now, what do we do, that’s all?

[Rosie] Three tablespoons of sugar [Arlene] Sugar [Rosie] And, cornstarch [Arlene] But what, a couple? [Rosie] I think that’s just one, one tablespoonTablespoon? Okay.
Because you can even make this without.
Oh!
But for a better consistency, you wanna do that.
‘Cause that thickens it up, right?
Yes, and one egg.
One raw egg?
One raw egg.
Okay. You’re good, okay. You cook that for a little while?
[Rosie] Yes. And then you put a chunk of butter in here. [Arlene] Ooh. All right. [Rosie] We’ll just start cooking right in here.While that’s cooking, Nickk, let’s talk about What kind of production How many cases have you made of this, in this many years?
Oh, I don’t…
Do you know what it is?
I don’t know the total number of cases.
Uh huh.
We do, when, our previous production, before we got some new equipment in line, we’d do about sixty cases a day.
[Arlene] Wow!But, I mean that was working from eight in the morning
[Arlene] Oh, have to be!’til eleven at night, I mean
[Arlene] It’d have to be.I mean, we, we did everything.
Sure. And, I think because this product is so unique and such an individual thing, that you have to keep your quality consistent, because if you get some peppers that are not as sweet as others, or somebody’s not constantly checking that.
Yeah.
It can really change
Yes,
[Arlene] Your whole line.Yes, it can. Actually, a lot of people think with bigger companies your quality, you know, as you get get your recipe bigger, don’t lose your quality, everybody tells us.
[Arlene] Right.But actually, the big companies work in big batches and so one batch of sauce might cover thousands of jars. For us, one batch of sauce covers about 36 jars.
[Arlene] Ah, I see, yeah, I gotcha. Yeah, so you… [Nickki] So it’s more consistent.Sure it is. Sure it is.
[Nickki] Yeah.Now, do you have plans of, like expanding the business? Are you going to include other products? What’re you thinking about?
Ah, yeah, we are gonna, we have some other products on the, on the drawing board. We do have a fried pepper with onion on drawing board. A hot pepper mustard.
Oh my goodness!
Yeah, so, but it just… Right now, we’re kinda focusing, actually we’re focusing on our Ringers, our Ringers have been our best seller.
[Arlene] Good.And we’re focusing on expanding that business, and
[Arlene] Something more.Yes.
[Arlene] Mmm hmm, oh that’s great. Why don’t we slake up to see what Rosie’s doing over here. We’re just, you’re, you’ve added the butter to that, right? [Rosie] Right. [Arlene] Now, you’re just creaming down the cream cheese just a little bit, huh? [Rosie] Until it just bubbles, it has to just bubble.Oh, that has to get good and buttered.
And, you’re going to add it right in here.
Okay, and then, what kind of a spread is this? This is a sandwich spread?
Yes, yes.
Can we turn this off?
Yes.
You got it. Now, we have to clean that off, won’t we?
I’ll clean it off for you.
Okay. You got a little, there we go Um, now, do you make this often?
Yes, uh huh.
Do you?
And, it’s, you can make it thicker consistency and make it for stuffed celery, too.
Ooh, those sound good.
Uh huh.
This looks great.
This is real good sandwich spread.
Is there a lot in there that we’re missing? Oh, not too bad.
Not too bad.
How about if I do one of these and just see if it works?
Okay.
You know I’ve been known to do this and it flies everywhere? But, it’s not doing that today. See there?
Seems as though it’s stuck a little bit on it.
It’s stuck, yeah. Well, there’ll be enough, won’t there?
Yes, right.
All right, now you’re going to put you would put this this sandwich spread on crusty buns or crackers, or whatever.
Yeah, it’s delicious just as a sandwich.
Now, when do you add the pepper?
We’re going to add that just as soon as we incorporate this in here.
Oh, that has to bubble first, right?
Yes, it’s gotta bubble first.
Don’t you love the dishes? I think this is so great, and look at this gorgeous I just love her apron.
[Rosie] Thank you. [Arlene] Nice big pepper on there. She’s doing all the work you see, and Nickk’s standing back here looking like a million dollars like he never lifted his hand to do anything. No, I know, that’s just a little joke, Nickk.But, see when we make the peppers, it’s the opposite way around.
The opposite, yeah she comes in to make sure you’re making them and you’re covered, right?
[Nickk] Yeah, Rose, Rose usually does the recipe. She’s the recipe lady. [Rosie] I change them. [Nickk] When we, [Arlene] You change them?Yeah, when we want to come out with a new item, she’ll
[Arlene] Hmm…She’ll formulate the recipe for them.
[Arlene] That’s wonderful, you need to have somebody who does that though who keeps, you know, looking and developing and trying something new and something more.Oh yeah.
And, I think that’s important. What I like about family businesses is that one person’ll do one thing, another person does another thing, another person… but everybody can do everyone else’s job, but they kinda stay usually in their own little
[Nickki] Right.Niche, and do what they’re supposed to do best. And, I think that’s great, because only in America do you have that freedom to develop things and to start, who would have thought that you in college would end up with a business just because you were challenged to do this as part of your schooling, your education. And, you end up with a wonderful family business that your whole family’s a part of. I think it’s great. I think it’s wonderful you will keep keep the family together this way, too.
[Nickki] Yeah.You know, sometimes families split up, but…
[Nickki] Oh, yeah.But if you’re in a business hopefully there won’t be anything that comes along and splits you up.
[Nickki] Yeah.I wouldn’t want that to happen.
[Nickki] Well we, yeah.Not at all.
Yeah, when you have five people, every yeah, you always have your conflicts of interest.
[Arlene] Oh sure.We really gel, everybody has their own expertise. I handle all the sales and marketing, David and Richard are good with the machinery equipment and the electrician and electrical stuff. And, dad handles production problems.
[Arlene] Mmm hmmAnd, Jamie, she’s an attorney, she helps us, she actually helps mix ingredients.
[Arlene] Oh, really?But then she helps the legal, on the legal side too.
[Arlene] Legal side, that’s great. That’s tremendous.Yeah, so we all do our own little thing.
Do your thing, that’s right.
And, Rose oversees us all.
She’s keeping you straight, huh?
She’s got the, she’s got the final word in everything.
Well, you know why? Her name’s on there right, Rose?
That’s right.
I mean, really, her name’s on there.
Yeah, I’m proud of it.
You would, that’s right you don’t want the quality to suffer for that.
Now I have to incorporate this.
It’s funny, when we had our old labels, they had our home number and address on it and people would call and we wouldn’t be there, but Rose would be there, she’d actually answer the phone and they’d be like
[Arlene] She’s taking orders, right? [Nickki] Is this Rose? [Arlene] And, you probably sold them everything too, didn’t you? [Nickki] Oh yes.Of course. Now, when you say that you ship anywhere in the country,
Yes.
How do you package?
We just package it in a box with styrofoam peanuts
And it keeps it safe?
Yeah, yeah.
Well, when you sent us some products, here for us to sample, of course we already had but we wanted to try some more. Everything arrived, and you sent nice big variety of jars and everything was fine, there was no problem. And, it wasn’t bulky or anything. And, you’ll do as big or, is there a minimum on your orderings?
[Nickki] No, no. You can call and order one jar.One jar.
[Nickki] If you want.Okay.
[Nickki] Actually, when people ask for one jar, I usually sent it to them as a sample, because I know [Arlene] Aww.Once they try it they’re gonna.
[Arlene] They’ll be back.They’ll be back.
[Arlene] You know what else I like, is the fact that this is you can buy quart jars.On the.
Which is really on the zingers.
On the Ringers.

Yeah.
I called them Zingers, sorry.

This is the stromboli, where she’s got the cheese and pepperoni, and of course her delicious Roasted Red Pepper Spread. Next to it over here, we have a sandwich spread she made with the cream cheese and she, she kinda made it’s almost kind of like a mayonnaise, isn’t it?
[Rosie] Yes.Yeah. But that is delicious on crackers, you can stuff celery with it. We even talked about deviled eggs, mashing the yolk of that and stuffing it back in. Oh, excellent. And, this is Rosie made us hot sausage and then, after you make your hot sausage, then you take the roasted red pepper spread and you put it on top. Is that right?
[Rosie] Yes.You can do hot, you can do mild, you can just, oh! That, oh. It’s very hard to talk when you really want to have a taste of that. And, you can even take the address and the phone number how they can contact Nickki, and get that food that line into your market And, we’re gonna talk to Foodland, see if we can get Foodland’s to carry it too, because, this is something, there are so many ways to use a great product like this and we all have Nickki to thank for it, because he had the brainstorm. And, mama over here, she had the recipe. And, you put that together, you put family, lots of love, lots of togetherness together, you put all that together and you have a great business and a great product.
