At Home was never meant to be a “health food” show, but back in the 1990s, Arlene did do a lot of low-fat cooking. And while we know today that healthy fats are part of a balanced diet, these recipes are some light and tasty things that anybody can enjoy.
What makes this show so special is that Arlene makes 4 different recipes, and all of them a very easy! Whether its the living light turkey chili, Sue’s low fat Monte Cristo sandwiches, ziti and great northern beans, or the baked tortilla chips, you won’t really think of these recipes as low-fat, but as just easy and tasty foods anyone will enjoy.
Living Light Chili
Ingredients
- 1 Tbs butter
- 1 large onion, chopped
- 1 tsp minced garlic
- 1 lb ground turkey
- 1 tsp salt
- 1 tsp chili powder
- 1 tsp basil
- 1/2 tsp oregano
- 1/2 tsp thyme
- 1/4 tsp black pepper
- 1 can light red kidney beans, do not drain (16 oz)
- 1 can stewed tomatoes (16 oz)
- 1/2 lb penne macaroni noodles, cooked and drained
- 1 small can chopped tomatoes and green chilies (4 oz)
- fat free sour cream
- Parmesan cheese
Instructions
- In a dutch oven or soup pot, melt butter and cook onion and garlic until tender and translucent. Add ground turkey and cook until well browned and no pink remains, stirring to break turkey into small pieces.
- Add all spices and stir well to blend. Add beans and tomatoes, and bring to a boil over medium high heat.
- Reduce heat to simmer and cook for 30 minutes. Stir in cooked pasta, and pour or ladle chili into serving bowl. Top with sour cream and Parmesan cheese, if desired. Makes 6 servings. Enjoy!
Sue’s Low Fat Monte Cristo Sandwiches
Ingredients
- 1 carton eggbeaters egg substitute
- 1/2 cup skim milk
- 1 tsp cinnamon
- 4 slices sandwich bread
- 1/2 lb fat free deli turkey breast, sliced
- 1/4 lb fat free deli ham, sliced
- light maple or pancake syrup
Instructions
- In a bowl, mix eggbeaters, milk, and cinnamon as for French toast batter.
- Place skillet or griddle over medium heat and spray with cooking spray. Dip bread slices in egg mixture and place on pan, cooking fora few minutes on each side until browned, like french toast.
- Place once slice of toast on a serving plate and layer 3 slices of turkey, 2 slices of ham, and 3 more slices of turkey on top. Place second slice of toast on top. Repeat with remaining bread, and cut sandwiches into quarters.
- Heat about 1/2 cup of syrup in a small, microwave-safe dish and serve hot sandwiches with warm syrup. Dip sandwiches in syrup or pour on top. Makes 2 sandwiches. Enjoy!
Ziti with Great Northern Beans
Ingredients
- 1/4 cup chicken broth or water
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 2 1/2 cups chopped tomatoes, either fresh or low-sodium canned (drained)
- 1 cup canned great northern beans, drained and rinsed
- 1/2 tsp ground black pepper
- 1/2 tsp dried thyme leaves
- 1/2 tsp dried basil
- 10 oz ziti noodles, cooked al dente and well drained
- 1/2 cup fresh parsley, chopped
Instructions
- In a medium saucepan over medium high heat, place broth, onion, and garlic. Cook and stir about 5 minutes until vegetables are soft.
- Add additional broth if necessary during cooking if it becomes too dry. Add the tomatoes and simmer 10 minutes. Add the beans, pepper, thyme, and basil. Simmer 10 more minutes.
- Serve sauce over cooked ziti and sprinkle with chopped parsley. Serve immediately. Makes 6 servings. Enjoy!
Baked Cinnamon Tortilla Chips
Ingredients
- 2 fat-free flour tortillas
- 1 tsp cinnamon
- 1 tsp sugar or zero calorie sweetener
- butter flavored cooking spray.
Instructions
- Preheat oven to 375 degrees.
- Spray tortillas with cooking spray, then sprinkle with cinnamon and sweetener.
- Bake for 10 minutes at 375, careful to not let tortillas burn.
- Remove and cool tortillas on a wire rack. They will crisp up as they cool.
- Once cool, break into pieces and serve. Light, crisp, and tasty. Enjoy!
- Note: Recipe can also be made with garlic powder or other seasonings instead of cinnamon and sugar.
