Arlene and Tammy Make Mexican Recipes! 🇲🇽

As Arlene points out at the beginning of this episode from 2012, neither her nor Tammy speak “Mexican” (although technically, people in Mexico speak Spanish, not Mexican), but that doesn’t stop them from enjoying Mexican food!

To celebrate that love of Mexican food, today they’re making taco soup, quick taco dip, guacamole, spicy Mexican torte, and Mexican cookie rings. It all makes for a delicious, colorful meal that’s savory, sweet, and spicy. Yum!

Taco Soup

Serve topped with corn chips, shredded Cheddar cheese and a dollop of sour cream. Make sure you adjust the amount of chile peppers if you're sensitive about spicy foods.
Course Soup

Ingredients
  

  • 1 lb ground beef
  • 1 onion chopped
  • 1 can chili beans (16 oz) with liquid
  • 1 can kidney beans (15 oz) with liquid
  • 1 can whole kernel corn (15 oz) with liquid
  • 1 can tomato sauce (8 oz)
  • 2 cups water
  • 2 cans peeled and diced tomatoes (14.5 oz, each)
  • 1 can diced green chile peppers (4 oz)
  • 1 pkg taco seasoning mix (1.25 oz)

Instructions
 

  • In a medium skillet, cook the ground beef until browned over medium heat. Drain, and set aside.
  • Place the ground beef, onion, chili beans, kidney beans, corn, tomato sauce, water, diced tomatoes, green chile peppers and taco seasoning mix in a large soup pot. Mix to blend, and cook over medium high heat for 30 minutes, or longer. Makes 8 servings. Enjoy!

Quick Taco Dip

Course Side Dish, Snack

Ingredients
  

  • 1 pkg cream cheese (8 oz) room temperature
  • 1 can refried beans
  • 2 cups shredded cheddar cheese
  • 2 fresh jalapenos seeded, deveined, and chopped
  • tortilla chips

Instructions
 

  • Spread cream cheese into bottom of a nine inch pie plate. Mix refried beans with spoon to soften and make spreading easier. Place beans on top of cream cheese layer. Liberally cover entire surface with cheddar cheese.
  • Place pie plate into microwave and cook on HIGH until hot and bubbly. Remove from oven and sprinkle with jalapenos. Makes 12 servings. Enjoy!

Paul’s Favorite Guacamole

Course Side Dish

Ingredients
  

  • 2 ripe avocados
  • juice of half lemon
  • 1/3 cup finely chopped shallots
  • 3 cloves garlic chopped fine
  • 3 ripe tomatoes chopped
  • 1/2 cup crumbled feta or blue cheese
  • 1/3 cup sliced black olives
  • 2 Tbsp chopped fresh basil or cilantro
  • salt and pepper, to taste
  • 2 Tbsp red wine vinegar, or more to taste
  • olive oil

Instructions
 

  • Clean avocados and dice into cubes. Place into mixing bowl. Squeeze lemon juice over cubes and mix to coat.
  • Add rest of ingredients except vinegar and oil. Mix well to combine. Add vinegar and oil and mix well. Serve immediately on tacos or with tortilla chips, eggs or wherever you would use salsa. Make 2 cups. Enjoy!

Spicy Mexican Torte

Serve with salsa, sour cream and guacamole, if desired.

Ingredients
  

  • 1 lb chorizo sausage casings removed and crumbled
  • 1 cup chopped onion
  • 2 cloves garlic finely chopped
  • 1 can green chile, chopped (4 oz)
  • 8 10" tortillas
  • 2 cups shredded Pepper Jack cheese divided
  • 1 can refried beans (16 oz) divided
  • 1 jar roasted red peppers (7 oz) divided

Instructions
 

  • In a large skillet or frying pan, cook chorizo, onion and garlic over medium heat. Cook, stirring occasionally, until sausage is done. Drain off grease, stir in chilies and set aside.
  • Preheat oven to 400 degrees. Lightly grease a 10 inch pie plate.
  • Place 2 tortillas in pie plate. Spread half of the sausage mixture over tortillas. Sprinkle with half of the cheese. Place 2 tortillas on top of cheese. Spread with beans. Place 2 tortillas on beans and place peppers on tortillas. Place 2 tortillas on top of peppers. Spread with remaining sausage mixture. Sprinkle with remaining cheese.
  • Cover and bake in preheated oven for 40 minutes. Uncover and bake 15 minutes more, or until cheese is melted and center is hot. Cool 10 minutes before cutting. Makes 8 servings. Enjoy!

Mexican Cookie Rings

Ingredients
  

  • 1 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, room temperature
  • 2/3 cup white sugar
  • 3 large egg yolks
  • 1 tsp vanilla extract
  • 5 Tbsp multicolored sprinkles

Instructions
 

  • Preheat oven to 375 degrees. Lightly grease baking sheets.
  • Sift together flour, baking powder and salt. Cream together the butter and sugar. Add the egg yolks and vanilla, beating until light and fluffy. Mix in the dry ingredients.
  • Shape into 1 inch balls. Push your thumb through center of each ball and shape dough into a ring. Dip top of each ring in decorating candies. Place cookies onto the prepared sheets.
  • Bake at 375 degrees for 10 to 12 minutes or until golden brown. Remove from the baking sheets and let cool on racks. Makes 2 dozen cookies. Enjoy!
