Arlene and Pam Cook a “Company Chicken” Dinner 🍗

If you’re a longtime fan of At Home, you might remember Norma Bixler’s “Company Dinner,” which was swiss steak with mashed potatoes. In this episode from 2012, Arlene is joined by her friend Pam Rain, who makes “Company Chicken,” which is a delicious baked chicken dish.

Both ladies named their meals this way because these special dishes are a great choice when you’re having company over for dinner. But Pam’s company chicken, cheese potato puff, spinach and bacon salad, and crazy chocolate cake are all so good, you’ll want to make these recipes whether or not you’re having company over!

Company Chicken

Course Main Course

Ingredients
  

  • 6 boneless chicken breasts
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups bread crumbs
  • 1 cup grated Parmesan cheese
  • 1/2 cup butter
  • 1 1/2 cups whipping cream

Instructions
 

  • Preheat oven to 350 degrees.
  • In a bowl, place eggs and beat until blended. In another bowl, place bread crumbs, and the Parmesan cheese in a third flat bowl. Dip chicken breast in beaten egg, coat with bread crumbs and dip back into beaten egg. Lastly, dip in Parmesan cheese.
  • Heat oil in fry pan over medium high heat. Add chicken breasts, one at a time, and brown on both sides. While chicken is browning, combine butter, whipping cream, and Parmesan cheese in a saucepan over medium heat. Heat until mixture boils and let boil for a few minutes.
  • Place browned chicken in baking dish and pour cream mixture over chicken. Bake in 350 degree preheated oven for 45 minutes or until juices run clear. Makes 6 servings. Enjoy!

Crazy Chocolate Cake

Course Dessert

Ingredients
  

Cake

  • 3 cups flour
  • 2 cups sugar
  • 6 Tbsp cocoa
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tsp vanilla
  • 3/4 cup vegetable oil
  • 2 cups cold water
  • 1 tsp instant coffee (optional)

Chocolate Butter Cream Frosting

  • 1 cup butter, softened
  • 1 cup Crisco shortening
  • 4 cups confectioners' sugar
  • 1 Tbsp vanilla
  • 2 packets unsweetened cocoa

Instructions
 

Cake

  • Preheat oven to 350 degrees. Grease and flour a 13×9 inch cake pan.
  • Sift together flour, sugar, cocoa and salt into a bowl. Add vanilla, vegetable oil, and instant coffee. Add 1 cup water a mix, but be careful to not overbeat. In a bowl combine baking soda and vinegar and add to cake batter. Add 1 additional cup cold water and mix lightly.
  • Pour batter into prepared cake pan. Bake in preheated oven for 35 to 40 minutes. Cool on wire rack. Frost with chocolate butter cream frosting. Enjoy!

Chocolate Butter Cream Frosting

  • Cream together sugar and Crisco. Add sugar, one cup at a time, beating well. Add vanilla and cocoa and cream until mixed thoroughly.

Spinach and Bacon Salad

Ingredients
  

  • 1 bag spinach, large
  • 1/2 cup salad oil
  • 1/4 cup sugar
  • 2 Tbsp cider vinegar
  • 1 tsp grated onion
  • 1/2 tsp salt
  • 1/4 tsp dry mustard
  • 6 slices crisp bacon, crumbled
  • 5 hard boiled eggs, chopped

Instructions
 

  • Wash and drain spinach. Place in fridge to chill.
  • To make dressing, in the blender container, combine salad oil, sugar, vinegar, onion, salt and dry mustard. Blend until thick and syrupy.
  • Add bacon and egg to spinach. Pour dressing over spinach, bacon and eggs (don't mix), and let stand for 1/2 hour. Toss. Serve immediately. Makes 6-8 servings. Enjoy!
  • Note: Can prepare dressing ahead of time and refrigerate if needed.

Cheese Potato Puff

Ingredients
  

  • 5 lb potatoes
  • 3/4 cup butter
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 large eggs, beaten

Instructions
 

  • Preheat oven to 350 degrees. Grease a casserole dish.
  • Peel and cut potatoes into cubes. Place in saucepan and cover with cold water. Bring to boil and cook until potatoes are very soft and tender. Drain well and mash potatoes until smooth.
  • In a small saucepan, blend together butter, cheddar cheese and the milk. Cook until thoroughly combined and melted. Stir milk mixture into mashed potatoes and blend. Next gently fold beaten eggs into potato mixture. Pour into prepared casserole dish.
  • Bake in preheated oven for 45 minutes, uncovered, or until puffy and golden. Makes 6-8 servings. Enjoy!
