Arlene Makes Easy Pastas with Tammy!

After Patti left At Home to start her own bakery in 2011, Arlene got a new kitchen helper: Tammy Dreistadt! Although she had helped out before behind the scenes, this episode from 2012 was Tammy’s bid debut on camera. Enjoy as she and Arlene make all kinds of delicious pastas and sides, including “Super Easy and Quick Pasta,” gnocchi with sausage, butter bread sticks, and breaded baked cauliflower. Yummy!

Super Easy and Quick Pasta

Course Main Course

Ingredients
  

  • 1 lb spaghetti pasta
  • 1/3 stick butter
  • 1 can tomato paste (6 oz)
  • 1 can tomato sauce (15 oz)
  • 3 slices American cheese, torn into 6 pieces
  • 1 pkg cream cheese (8 oz), cut into cubes
  • Chopped fresh basil

Instructions
 

  • Boil spaghetti until the pasta is a little softer than al dente. Drain pasta into colander. Place butter into hot pan and return pasta to pan.
  • Place pan over VERY LOW HEAT and mix until butter coats the pasta. Add tomato paste and tomato sauce and mix well. Add in 3 slices of American cheese that has been cut in half before putting into pot. Break softened cream cheese into small pieces and mix into pot (which continues to heat over a low flame).
  • Mix well and let cook about 2 to 3 minutes, continuing to stir occasionally to make sure all the pasta gets thoroughly covered with sauce. Sprinkle with chopped basil. Makes 4 servings. Enjoy!

Breaded Cauliflower

Course Side Dish

Ingredients
  

  • 1 head cauliflower, cut into florets and washed
  • 1 large beaten egg
  • Breadcrumbs plain or seasoned
  • 1/2 cup grated Parmesan cheese
  • Canola or Olive oil

Instructions
 

  • Preheat oven to 350 degrees. Brush a large baking sheet with a thin coat of canola or olive oil
  • Place egg in a bowl and bread crumbs and cheese in a separate bowl. Dip florets first in egg and shake off excess, then into breadcrumbs, rolling floret gently in crumbs to cover well. Place on prepared pan.
  • Mist florets with canola or olive oil or spray with non stick cooking spray. Cook in preheated oven for 30 minutes, turning the florets over halfway through the cooking time. Makes lots. Enjoy!

Sausage Gnocchi

Ingredients
  

  • 1 Tbsp olive oil
  • 1 lb Italian sausage links
  • 1 Tbsp olive oil
  • 1/2 cup onion, chopped
  • 1 Tbsp minced garlic
  • 1 1/2 tsp Italian seasoning
  • 1 can crushed tomatoes (14 oz)
  • 2 Tbsp water
  • 1/4 tsp salt
  • 1 tsp white sugar
  • 1 Tbsp Italian seasoning
  • 1 lb fresh gnocchi
  • 1 Tbsp chopped fresh flat-leaf parsley, for garnish
  • 2 Tbsp grated Romano or Parmesan cheese

Instructions
 

  • Heat l tablespoon olive oil in a skillet over medium heat. Add sausages and cook until browned and firm, about 10 minutes. Cut sausages into 1 /2 inch slices, return to the skillet, and continue cooking until no longer pink. Drain sausage slices on a paper towel lined plate.
  • Meanwhile, heat 1 tablespoon olive oil in a saucepan over medium heat; stir in onion and cook until the onion softens and turns translucent, about 5 minutes. Add garlic and 1 1 / 2 teaspoons Italian seasoning; cook until the garlic softens, about 2 minutes. Pour in crushed tomatoes, water, salt, sugar, and remaining l tablespoon Italian seasoning. Bring to a simmer, then reduce heat to medium-low, cover, and simmer for 20 minutes.
  • Bring a large pot of lightly salted water to a boil. Add gnocchi and cook for 2 to 3 minutes until pasta floats; drain.
  • Meanwhile, stir Italian sausage slices into sauce to warm. Toss pasta with sauce, and sprinkle with chopped parsley and grated Romano cheese to serve. Makes 4 servings. Enjoy!

Butter Breadsticks

Ingredients
  

  • 1/3 cup butter, melted
  • 2 1/4 cups flour
  • 3 1/2 tsp baking powder
  • 3 tsp sugar
  • 1 1/2 tsp salt
  • 1/2 cup grated Parmesan cheese, more for sprinkling
  • 1 tsp garlic powder
  • 1 cup milk

Instructions
 

  • Preheat oven to 450 degrees.
  • Place butter in an ungreased 15-inch by 10-inch baking pan. In a bowl, combine flour baking powder, sugar, salt, Parmesan cheese and garlic powder; mix well. Stir in milk just until moistened. Turn onto a floured surface and knead 10 times. Roll into a 12-inch by 9-inch rectangle and cut into 24 (1/2-inch by 9-inch) strips.
  • Dip each side of strip in butter in prepared pan. Twist strip and arrange in pan, not allowing sides to touch. Sprinkle with additional Parmesan cheese. Bake in the preheated oven for 15 minutes or until golden brown. Makes 24 bread sticks. Enjoy!
