Too Much Zucchini? 🥒 Try These Easy Dinner Recipes!

Summer is here, and what can do you do with all that zucchini? In this episode from 2010, Arlene and Patti are here with some awesome dinner recipes. This time around there’s no zucchini bread or zucchini cake; these are are hearty and healthy dishes you can serve your family. There’s zucchini onion quiche, sausage stuffed zucchini, pepperoni zucchini casserole, and zucchini lasagna casserole. Yum!

Sausage-Stuffed Zucchini

This is a hearty and healthy main course!

Ingredients
  

  • 2 medium-sized zucchini
  • 1/3 cup finely chopped onion
  • 1 Tbsp olive oil
  • 2 tsp flour
  • 1/2 tsp crushed dried basil
  • 1/8 tsp pepper
  • 1/2 cup milk
  • 1 slightly beaten large egg
  • 1/2 lb sweet or hot sausage, crumbled, browned well and drained thoroughly
  • 1/2 cup grated parmesan cheese

Instructions
 

  • Preheat oven to 350 degrees. Spray a baking dish with nonstick cooking spray.
  • Cut zucchini in half lengthwise. Place cut side down in a microwave-safe baking dish and microwave on HIGH for 2 to 3 minutes or until almost tender. Scoop out pulp leaving about 1 1/4-inch thick shell. Set shells aside. Finely chop pulp and set aside.
  • In a medium saucepan, saute onion in hot oil until tender, but not brown. Add chopped zucchini pulp and cook for 1 minute. Stir in flour, basil and pepper. Add milk and, stirring constantly, cook mixture until thick and bubbly. At this consistency, cook and stir for 1 additional minute.
  • Very slowly spoon 3 or 4 tablespoons of zucchini mixture into beaten egg, beating vigorously to keep egg from curdling, then pour egg mixture very slowly into remaining bulk of zucchini mixture, stirring constantly. DO NOT ALLOW THIS TO BOIL as mixture will curdle. Add well-drained sausage and parmesan cheese and stir well to blend,
  • Spoon mixture into zucchini shells and place in prepared baking dish. Bake, uncovered in preheated oven for 25 to 30 minutes or until filling is lightly browned. Makes 4 servings. Enjoy!

Zucchini and Onion Quiche

You may not think of zucchini and eggs together, but this tasty quiche is great for dinner or brunch!

Ingredients
  

  • 1 (10 inch) pie shell, unbaked
  • 2 medium zucchini, shredded
  • 1 large onion, peeled and sliced
  • 2 cups shredded cheddar cheese
  • 3/4 cup half and half cream
  • dried dill weed
  • salt and pepper, to taste
  • 4 large eggs, lightly beaten

Instructions
 

  • Preheat oven to 425 degrees. Flute crust edge of pie shell.
  • ln a saucepan, cover zucchini and onion with water and cook until tender, about 5 minutes. Drain well and allow to cool.
  • Sprinkle a thin layer of cheese over bottom of pie crust. Spoon zucchini mixture evenly over cheese.
  • ln a bowl, stir together cream, dill weed, salt, pepper and eggs until mixture is combine well. Pour mixture over zucchini. Top with remaining cheddar cheese.
  • Bake in preheated oven for 40 minutes or until knife inserted in center of quiche comes out clean. Makes 6 to 8 servings. Enjoy!

Zucchini Lasagna

Ingredients
  

  • olive oil
  • 6-8 zuccini, sliced
  • 1 cup thinly sliced Vidalia onion
  • 2 cans Hunt's Herb Tomato Sauce (15 oz, each)
  • 2 Tbsp oregano
  • garlic salt
  • black pepper
  • Italian breadcrumbs
  • 1 1/2 cups shredded mozzarella cheese
  • Parmesan cheese, grated

Instructions
 

  • Preheat oven to 350 degrees. Grease bottom of a 9-by-13-inch baking dish with olive oil.
  • Layer slice zucchini into prepared baking dish, then cover with onion.
  • Pour tomato sauce over onion. Sprinkle oregano, garlic salt, black pepper and bread crumbs over sauce. Top with mozzarella cheese then sprinkle with parmesan cheese.
  • Cover and bake in preheated oven for 35 to 45 minutes. Makes 8 to 10 servings. Enjoy!

Pepperoni Zucchini Casserole

Ingredients
  

  • 4 cups peeled, seeded and chopped zucchini
  • 1/2 cup chopped onion
  • 2 cups shredded Mozzarella cheese
  • 2 Tbsp grated parmesan cheese
  • 1/2-1 cup pepperoni, cubed
  • salt, pepper, basil and oregano, to taste
  • 1/4 cup vegetable oil
  • 4 large eggs
  • 1 cup Bisquick Baking Mix

Instructions
 

  • Preheat oven to 350 degrees. Spray a 9-by-13-inch baking dish with cooking spray. Set aside.
  • ln a large bowl, combine zucchini, onion, cheeses, pepperoni and spices and mix thoroughly. Set aside.
  • ln another bowl, combine oil, eggs and Bisquick. Mix well then add to zucchini mixture and blend thoroughly.
  • Spoon mixture into prepared baking dish. Bake in preheated oven for 35 to 40 minutes or until cheese starts to brown. If desired, spaghetti sauce may be served on the side. Makes 12 servings. Enjoy!
